Pina Colada Muffins


I bake a lot of muffins and this one is a keeper. A perfect muffin to add to your brunch menu or to enjoy any time.
My sister served these delicious muffins at a Bible study in her home many years ago and shared the recipe with me.
  • 1/4 cup oil
  • 1/2 cup sugar
  • 1 egg
  • 1 cup sour cream
  • 1 teaspoon rum extract
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut, I prefer angel flake but shredded is fine too.
  1. Whisk together oil, sugar, egg, sour cream, and rum extract until well combined.
  2. Stir in dry ingredients, just until blended. Do not over mix.
  3. Fold in pineapple and coconut.
  4. Scoop into a greased muffin pan.
  5. Bake in a 375ยบ oven for 20 to 25 minutes, until done and golden in color. 
  6. Yield: 12 muffins

    I'm wondering if I can omit the rum extract? I don't drink and no one I know does either!
    I would substitute vanilla but how would it affect the overall taste of the muffin?

    1. You can use imitation rum extract or vanilla if you wish.

    2. Just a FYI, alcohol can be found in many flavored extracts, not just rum.

    3. BTW- The alcohol used in ANY recipe ALWAYS evaporates during cooking!!!

  8. Curious if you happen to know the calories in this. I'm always looking for high calorie muffins, the higher the better. Unusual, I know but...
