Cheese Straws

I have had these tasty little treats elsewhere...but recently made them up at home.  They are quick to make and make a great addition to a buffet table...alongside other appetizers. 


Ingredients:
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 cups sharp Cheddar cheese, grated
  • 1/2 cup butter, grated
  • 1/2 cup ice-cold water
 
Method:
  1. Line several baking sheets with parchment paper (or grease).
  2. Combine flour, baking powder, cayenne pepper, salt,  grated cheese and butter.
  3. Mix until well combined.
  4. Add water, a little at a time to form a stiff dough.
  5. On floured surface, roll out dough to about 1/4" thickness. (Work with half the pastry at a time.)
  6. Cut sticks into about 6" lengths, using a pizza cutter or sharp knife.
  7. Arrange pieces on the baking sheet.
  8. Bake at 350°F for 12-15 minutes, or until the straws are crisp and golden in colour.
  9. Yield: about 5 dozen straws.

  2. I haven't thought of making cheese straws in years! They are so tasty...thanks for the reminder. I put twists in mine before baking, to be "fancy" :)

  3. Could these be made ahead of time and stored in a ziplock bag? They would be great for a graduation party table.

    1. They freeze well...and are just like fresh when taken out of the freezer.

  4. From the photo it almost looks like you put a shake of parmesan on them before you baked them or maybe coarse salt. Is that the case?

    1. No, I never coated them with anything. The grated cheese melts while baking, and oozes out to texture the 'straws'.

  10. Will these taste good with out the cayenne pepper? I don't use it.
    They look delicious and I would really like to try them. I think the
    grandchildren (and adults) would like them.

  11. Do you need to refrigerate them or can they store in a sealed bag or container on the counter?

    1. No need to refrigerate them...though I would freeze them if you don't plan to eat them within a few days.

  12. I used to make cheese straws when I was little. I loved mashing all the ingredients together, rolling out the dough, cutting, baking and sharing them with my brother and cousins. Thanks for bringing to mind a wonderful memory and sharing your recipe! YUMMY!
