When I was in Colorado, to help my daughter pack to move to Canada, I went through her pantry and put together leftover ingredients of this and that to make a batch of cookies. With the high altitude it was an extra challenge. We really liked them, except that they spread out too much. I've tried to re-create them since then and this is what I came up with.
Ingredients:
- 1/2 cup butter
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 tablespoons pancake syrup
- 2 eggs
- 1 teaspoon vanilla
- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 cup each, granola and oatmeal OR 2 cups oatmeal
- 1 cup craisins (dried cranberries)
- 1 cup coconut
- 3/4 cups chocolate chips
- 1/2 cup nuts, chopped or slivered
- 1/2 cup Skor toffee bits
- Beat butter and shortening well, adding sugar, syrup and vanilla. Continue beating until smooth, then blend in the eggs
- Mix flour, baking powder, soda and salt. Stir into wet ingredients.
- Add the rest of the ingredients, stirring until well blended.
- Drop by rounded tablespoon onto greased cookie sheets. Flatten just slightly.
- Bake at 350° F for about 12 minutes.
- Remove from cookie sheets with lifter, once cooled. Yield: 4 dozen cookies
Thanks for posting this great looking cookie recipe. Can you clarify for me what you mean by oatmeal? I assume you mean something different than oats? Also, if you mean oats do you mean the quick cooking or regular rolled oats. Thanks :)

Plain rolled oats it is... the kind you make porridge with. I use the 1 or 3 minute cooking kind. (no instant packages)
ReplyDeleteThese sound delicious. I was wondering since my family is not fond of coconut, if it could just be left out? If it is needed to help prevent the cookie from spreading too much could you suggest another ingredient that would be a good replacement.

Linda, as you can tell from how this recipe came about, you can also play with it. For example, take out the coconut and add another cup of rolled oats.

Oh, these look fabulous! I can hardly wait to try them. On first look, I thought they had cranberries in them. Do you have a recipe for Michigan Rocks (drop cookies with dates and nuts) or iced hermit bars that are made with All Bran or Bran Buds?
