This is a wonderful way to use up leftover chicken. I can assure you there will be no leftovers with this one.

  • 1 medium green pepper, finely chopped
  • 1 medium red pepper, finely chopped
  • 1 tablespoon oil
  • 1/2 garlic clove, minced

  1. We will have to try this recipe, sounds delicious.... Mmmmm

I make something simular to this, however, instead of celery soup, I use mushroom, and in place of the flour tortilla's, use corn tortilla's. To top it off, sour cream & guacamole.

It is one of our oldest grandchild's favorite meals.

Thanks for sharing this recipe with us.

  13. Well, we did have this for dinner. When I told the family what we were having they pulled a face ( not a good one) but when I served it up there were clean plates all round. Thanks for a new keeper recipe.

  16. Do you think this could be made in the slow cooker?
How would you adapt the recipe?
How long would you cook it?

    1. Yes this recipe works well in a slow cooker.
Prepare and layer same as you would if in a pan except for the cheese.
I would cook it on low for about 3 hours, then add cheese, close the lid and let sit for 15 minutes until cheese is melted.
