Cranberry Waldorf Jello


This jello salad can replace the cranberry sauce that goes with your turkey. It does not run all over your plate like some jello salads do and adds appealing flavor with the apple tidbits and walnuts.

Ingredients:

  • 1 can (14 oz) whole berry cranberry sauce
  • 1 large (6 oz) pkg cranberry Jello
  • 2 cups boiling water
  • 1 cup cold water
  • 1 diced Granny Smith or Golden Delicious apple
  • 1 - 2 stalks celery, finely chopped
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 small (3 oz) pkg cranberry Jello (optional)


Method:
  1. Empty cranberry sauce into 5 or 6 cup serving bowl.
  2. In a separate bowl, dissolve Jello in boiling water. Stir well. Add cold water.
  3. Stir dissolved jello into cranberries.
  4. Add apple, celery and walnuts.
  5. Refrigerate several hours until firm.
Note: Once jelled, I like to top it off with another thin layer of jello - since the fruit tends to float to the top and stick out slightly. This jello salad layers itself.

  4. I make a very similar salad (no celery, orange or pineapple instead) and have learned a great way to keep the fruit from rising to the top. Mix all your ingredients, fill a large bowl with ice water (emphasis on ice), and place the salad ingredients in another bowl into the ice water. I prefer a stainless steel bowl as it holds the cold well. Stir frequently until the jello is beginning to get firm. Pour salad into the serving bowl and place in the fridge. Everything will be suspended nicely, and no rising to the top.

  7. Another way to have a jello salad with fruits and veggies suspended is to use ice cubes in place of the cold water. Stir well to dissolve and discard any bits of ice that do not melt. No more layered salads with this method.

  12. Made a variation of this tonight using Knox gelatin and cranberry cocktail with a bit of strawberry jello for sweetening & flavour. Gave it a gentle stir when it was at the 'gel' stage and all the bits are suspended nice and even. It tastes wonderful and looks so festive. Thanks again girls. You've been my cooking inspiration since I found you in the spring.
