Skillet Spanish Rice


My Mom used to make this for Saturday lunch. 
 She didn't really have a recipe so I've had to try each time to recreate it.
 Recently I made it again and this time I wrote down the ingredients so I could share it on the blog. As with many casserole or skillet meals, 
you can adjust the ingredients according to what you have in the fridge.
 The main thing to remember is that the rice gets its flavour by cooking in the tomato sauce.
  • 1 pound. hamburger
  • 1 onion chopped
  • 1/2  green pepper chopped
  • 1/2  red pepper chopped
  • 1 stalk  celery chopped
  • 2 cloves garlic minced
  • 1 cup uncooked rice
  • 1 28 1/2 ounce can diced tomatoes undrained
  • 1 cup tomato sauce
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 1/2teaspoon thyme
  • 1 cup shredded zucchini
  • 4-5 mushrooms, chopped (opt.)
Garnish
  • 1/2 cup each cheddar and mozzerella cheese, grated
  • corn chips
  1. Break up hamburger in an electric frying pan or a deep skillet over medium heat, stirring until hamburger is browned.
  2. Drain fat and return hamburger to pan.
  3. Add remaining ingredients except zucchini.
  4. Cover skillet tightly and cook on low heat for about 20 minutes.
  5. Stir in zucchini, replace cover and cook until liquid is completely absorbed into the rice.
  6. Sprinkle cheddar and mozzerella cheeses over the top and cover until the cheese has melted.
  7. Garnish with corn chips around the edge and serve right from the skillet.

  1. My Mom (and now I) brown the rice first in bacon fat or oil. Browner rice has a flavor all it's own. I like thexaddition of the cheese and corn chips. I just made a pan of Spanish Rice day before yesterday. It freezes well so I put it in 1 serving size containers as I'm on my own again.

  4. My mom made something similar, and so have I over the years. It's always good. If you like spicy, adding a packet of hot taco seasoning really spices it up too.

  7. I made this tonight for dinner. I need quick easy-to-make for Fridays. It was delicious. I'd say the corn chips are an option, so don't stress if you don't have them on hand.

  9. I made this last night with some substitutions and it was a hit. I used Basmati rice, and think that I would have liked it better with Uncle Ben's because it would have stayed more distinct. Also, I was out of chili powder and thyme, but it was very good with some crushed red pepper flakes and some Essence, worcestershire, etc. Everyone really liked the addition of the chips, we used Frito's.

    Yes, the corn chips are optional - I added them to make the casserole more "Photogenic!" but we loved the added crunch.

  13. My first time here. A friend referred me to your website last week and I'm quite enjoying it. I watched your endarsement on youtube and was howling in front of the computer (my non-mennonite husband not quite getting it...). I made the Spanish Rice Skillet for supper last night and it was a huge hit with my hubby and kids. I did not have zucchini; wondered about using potatoes instead but ended up just going without. I was hoping to check out the Seven Layer Dinner recipe, but apparently there is a problem with that page--disappointed:(
