Ooey Gooey Chocolatey Puff Wheat Squares



If you like Puff Wheat Squares, you are going to love these.
I got the recipe from the cook book "The Best of The Best and More" from the Best of Bridge Collection.I tripled the recipe to serve a whole bunch of young  people and it made two big cookie sheets. One recipe is usually sufficient for a family and a few friends. It makes a 9 x 13 inch pan.
  • 1/2 cup butter or hard margerine (I like using butter)
  • 1 cup corn syrup
  • 1 cup white sugar
  • 1/4 cup brown sugar
  • 6 heaping tbsp. cocoa powder
  • 1 tsp. vanilla
  • 10 cups of puffed wheat (not found in the cereal isle at Super St*re but by the baking supplies like chocolate chips and nuts etc.)
  1. Combine butter, corn syrup, sugars and cocoa powder in a heavy saucepan.
  2. Bring to a boil. (Very important) Stir constantly on a low boil for 2 minutes. 
  3. Remove from heat and add vanilla.
  4. In a large bowl pour mixture over puffed wheat. 
  5. Mix well and press into a greased 9 x 13 pan.
  6. Wet hands work better than greased hands to handle the stickiness so just moisten them with a bit of water.
Resist the temptation to cut just a little piece for yourself, you'll nibble away at it til it almost gone. it is that good!

    1. Add 1 cup of mimi marshmallows, if you over boiled will keep them soft and chewy if you under boiled will hold it together...just add after mixture has boiled.

  15. My mom could never make puff wheat cake to save her life, so she never did. I may have to buy some (too bad they come in such a huge bag! I'll be eating puff wheat for months!) just to try & see if I have better luck than she did...Thanks!

  17. Oh Charlotte...I am so in need of some comfort and memory food....grin...so I am making this tonight. Oh how I remember my mom making this and then my sister as she grew older...she'd make this for us kids to snack on.! Love it. Here's hoping I can make it stick together...'candy' making is NOT my skillset for sure!

  25. These are best puffed wheat squares that I have ever tried. No need to try others. I stored the entire pan in an x-large ziplock bag. It was three days ago and they are still as fresh as the first day. Thanks!

  27. To smooth or pack anything that is sticky I save the wax/plastic cereal bags, open them up, lay the sheet over the gooey stuff and press. No butter, water or even hand washing after the fact required. Mom's never stuck together but it all came from cutting back on some of that good stuff to make it gooey. I like insurance so that any recipe like this that I want to save I print and file in a ring binder just in case my computer is ornery when I want to make something.

  28. Oh my goodness! This is awesome! I usually make my mom's old recipe fairly often and it is enjoyed by all but this, I'm not sure anyone but me will get any! I usually try (quite haphazardly) adding extra of all the ingredients to make mine more gooey. No need for that with this recipe, it is gooey and so delicious! I actually didnt have vanilla bc I forgot to buy today and it was still to die for. I'm only sending a review to stop me from having ANOTHER piece. Lol thanks sooo much.

  30. Just made these & they are soooo yummy! I only added the puffed wheat cup by cup as I like mine to be on the gooey side. Glad I did as I only needed 8 cups of puffed wheat to get the gooey-ness we love! I also cheated and lined my pan with parchment paper & used parchment paper to press down too.

  34. Anonymous... it's difficult to take a guess but I would check all of the ingredients again... such as, make sure you used corn syrup,not pancake syrup, the right amount of wheat puffs, etc.

  42. If you melt the butter first the other ingredients are easier to mix in. Also, I line my pan with parchment paper and then I put a piece of parchment on top when I am pressing it down. Not quite as messy! Great recipe, thanks for sharing!

  47. I've made these twice-each time following the recipe exactly. The first time they were excellent. The second time the cake didn't stick together at all and I had to throw it out.
    And, yes, I had planned to serve them to company. One of our guests said she'd also made puffed wheat cake using the recipe from MGCC and they also didn't stick together at all.

    1. Isn't that frustrating when you make something, once it turns out and the next time it doesn't? I really can't explain why that happens. I fortunately have not had that happen to me with this recipe, but something as simple as Rice Krispee squares it has, go figure. Is it the type of marshmallow that we use, who knows. Better luck next time.

  48. I was even able to adapt these to use splenda white and brown sugar, and light corn syrup,still taste yummy Not totally sugar free but close enough for me to enjoy.

  50. Happiness is biting down on these, oh so delicious, delectable, sweet tooth satisfying squares while remembering how scrumptious they were as a child when my Mom would make them for the Family from that monstrous bag of puffed wheat.
    I love them as much today as I did when I first tasted them back in the 1950's. Good things don't always come in small packages.

  53. I lost my puffed wheat recipe and found yours, it is much better! I also modified your recipe out of necessity...I was almost out of cocoa powder so I used 1 tablespoon of powder and half a cup of chocolate syrup. They are great!

  54. I just made these with 1/2 the white sugar in Splenda and the brown sugar was Splenda too,so hopefully they taste good? I'll let you know when they are chilled and ready to eat.

  55. I have made these a few times and they are great. I modified it slightly and used more brown sugar and less white sugar, however, sugars still equaled the amount noted iin the recipe. These are very addicting....lol

  58. Puffed Wheat Squares are my favorite late night snacks, warm them up in the microwave for 30 seconds, then eat the yumminess! Also, add molasses for extra taste if wanted

I also make this for the labour/delivery maternity ward at our hospital as a treat for the nurses and doctors.. my daughter in law works there and they really appreciate the snacks for their break times... I recommend this to everyone who

  64. This can easily be made as a gluten free treat by using rice puffs instead of puffed wheat. One bag (170g) of Nature's Path rice puffs makes one recipe. Don't use Rice Krispies - they don't work.

  66. These are the best. I have made theses about 10 times and everyone that eats one loves them also. The only thing I do different is instead of 1/2 cups of butter I use 1/2 cups plus 3 TBSP of butter
