I watched your endarsement on youtube and was howling in front of the computer (my non-mennonite husband not quite getting it...). I made the Spanish Rice Skillet for supper last night and it was a huge hit with my hubby and kids. I did not have zucchini; wondered about using potatoes instead but ended up just going without. I used Basmati rice, and think that I would have liked it better with Uncle Ben's because it would have stayed more distinct. Browner rice has a flavor all it's own. I like thexaddition of the cheese and corn chips. I just made a pan of Spanish Rice day before yesterday.
