Chocolate Zucchini Cake


Do you have an abundance of zucchini this year from your garden, or given to you from a friends garden? I am very happy to receive them, there is so much you can do with them, sweet and savory. Our family enjoys this cake very much, it is moist and chocolatey with a hint of spice.
Tastes great warm with a little ice cream or just as is.
  • 1/2 cup of hard margarine, softened
  • 1/2 cup of vegetable oil
  • 1 1/2 cups of sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup of sour milk (1 teaspoon of lemon juice of vinegar at the bottom of the measuring cup and fill with milk, let stand a few minutes)
  • 2 1/2 cups flour
  • 4 tablespoon cocoa
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2 cups coarsely shredded zucchini
  • chocolate chips for sprinkling on top of the cake before baking
  1. Combine margarine, oil with the sugar and vanilla, beat well.
  2. Add eggs one at a time beating well with each addition.
  3. Sift all the dry ingredients together, adding into the wet mixture alternately with the milk.
  4. Stir in the zucchini.
  5. Pour into a 9x13 baking dish.
  6. Sprinkle the top with desired amount of chocolate chips.
  7. Bake at 325 for 40-45 minutes of cake test is done.

  2. I don't add the chocolate chips until I pull the cake out of the oven. Then I give them a couple of minutes to soften before spreading them over the top like icing.

  5. This is baking in the oven right now. I didn't have any chocolate chips, so I am going to make a chocolate frosting instead. I can't wait to try it!

  7. So, we are the gals that you met at the Steinbach book signing...do you remember us!?!?! Anyway, we made the Zucchini cake (and cupcakes) recipe...how delicious! We had such a BIG zucchini that we actually haven't used it all yet. We've been sharing the delights of this recipe with family and friends! For those of you who don't like zuchhini in choc. cake/cupcakes, you can't even taste it! It was great to meet some of you last week!

    I brought home a zucchini from the neighbor the other day. The wife had looked up some recipes, but I knew where to go. MGCC. She made the choc cake with the chips on it, and Wow! Its fabulous! Thanks for all that you do, here and otherwise!
