Chocolate Zucchini Bread


This is the season when Zucchini's are offered by neighbors or are easily affordable. I have been making this recipe since I was married 31 years ago. I got it from my mom by love Pauline. It is easy and quick and never fails. It stores well and can be frozen.
  • 4 cups of cubed zucchini ( you can see the cubes in the blender)
  • 4 farm fresh eggs
  • 2/3 cup canola oil . .or other light oil
  • 2 cups fresh walnuts. .very coarsely chopped I like the walnuts left big. . but you can chop them fine. You can also leave them out or subsitute with another nut of your choice.
  • 2 cups sugar
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cocoa
  • 2 teaspoons cinnamon (optional)
  • 1 12 ounce bag of mini chocolate chips
  • 1 teaspoon vanilla or maple flavouring
  1. Preheat oven to 350 ยบ.
  2. Put the zucchini cubes, eggs, and oil in the blender. Blend on high speed until smooth.
  3. In large bowl, combine all the dry ingredients.
  4. Add the zucchini mixture and stir with a wooden spoon.
  5. Add the chocolate chips and walnuts.
  6. Pour into a greased tube pan or two 9 X 5 loaf pans.
  7. Bake for 60 - 75 minutes. Test with toothpick.

  1. I JUST got home from the gym where I took a choc. zucchini cake recipe AND zucchini to a young friend. I have been making mine for many years as well. It was fun to come here and see a similar version but yet different. Since mine is more of a cake, I bake it in a 9 x 13. I'll give your bread a try. Thank you!

  6. Just in time...I was given two HUGE zucchini from one of my co workers this morning...and I have company for the weekend. I'll stuff one using Marg's recipe and make this loaf with part of the other one. Looks tasty. Kathy

  7. Mmmmm.. I LOVE Zucchini bread.. I was hooked the very first time I had it. I've never had it with cinnomon though! I'll have to try it - the maple flavoring sounds very good !!

  9. Once again, your pictures make me want to make this cake. This is one of the goodies my Mom bakes for the grandchildren. Sometimes she makes chocolate zucchini muffins and I really like those too.

  10. I just made this and it was delicious! I used 1/3 cup oil and 1/3 cup applesauce (unsweetened) and it worked great! (Just lower that baking time!) I LOVE that this involved blended zucchini, just makes making this easier. Thanks!

  12. Made this yesteday, and it was fantastic! I made one loaf with the nuts, & one without. I was running low on chocolate chips, so I chopped up some semi-sweet chocolate squares. Turned out great! Thanks for sharing.
