I love the taste of citrus in cakes. When I came across this recipe I knew I had to try it. I adapted it to my taste.
- 1/2 cup butter, softened
- 1 cup brown sugar, lightly packed
- 1 egg
- 3/4 cup buttermilk
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- Juice and zest of 1 large orange
- Cream softened butter and sugar until creamy.
- Add egg, orange juice, and zest.
- Whisk dry ingredients together and add to creamed mixture alternately with buttermilk, mix well.
- Pour into a greased 8" x 8" greased pan and bake in a 350ยบ oven for 35 minutes.
- When cake is baked spread with topping.
Topping:
- 3 tablespoons butter, melted
- 1/4 cup brown sugar
- 1/2 cup coconut, flaked
- 1/2 cup walnuts
- Spread topping on baked cake and put back in oven and set oven to broil.
- Watch carefully, once topping is bubbly and golden remove cake from oven.
- It is delicious served warm or cold.
- Yield: 9 pieces
This looks a good cake to make and keep in the freezer for unexpected company or Sunday Faspa.

ReplyDeleteOH NO - topping is too sweet for us BUT this cake with whipped cream cheese creamed with a bit of orange pulp and juice will make it "just right"...

ReplyDeleteAh yes! Two of my 3 favorite words when it comes to cooking: orange and cake! (The 3rd is, of course, chocolate. They create heaven when combined!)

My Nana used to make an orange cake, different from this, but still delicious. If you'd like to "visit" me in New England I'd love it, I enjoy company and new Followers are so exciting. ReplyDeleteMy mother-in-law made this and we had it at their house last weekend. It was delicious and I thought it tasted very similar to an orange-coconut cake I posted on my blog in May. I like your topping!
