Orange Cake

I love the taste of citrus in cakes. When I came across this recipe I knew I had to try it. I adapted it to my taste.

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup brown sugar, lightly packed
  • 1 egg
  • 3/4 cup buttermilk
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Juice and grated rind of 1 large orange

Method:

  1. Cream softened butter and sugar until creamy.
  2. Add egg, orange juice and grated rind.
  3. Blend dry ingredients and add to creamed mixture alternately with buttermilk, mix well.
  4. Pour in to a greased 8" by 8" greased pan and bake at 350ยบ for 35 minutes.
  5. When cake is baked spread with topping.

Topping:

  • 3 tbsp butter, melted
  • 1/4 cup brown sugar
  • 1/2 cup flaked coconut
  • 1/2 cup walnuts
  1. Spread topping on baked cake and put back in oven and set oven to broil.
  2. Watch carefully and once topping is bubbly and golden take cake out of the oven.
  3. It is good warm or cold.

  3. OH NO - topping is too sweet for us BUT this cake with whipped cream cheese creamed with a bit of orange pulp and juice will make it "just right"...

  4. I so enjoy Orange Cake. I had to smile at how I used to always make orange cake mixes .. loved them back in the day.

  7. Ah yes! Two of my 3 favorite words when it comes to cooking: orange and cake! (The 3rd is, of course, chocolate. They create heaven when combined!)

  8. Oh my goodness, this is my 1st visit to your blog, and it's fantastic! I think I'll be cooking that cake this weekend! My Nana used to make an orange cake, different from this, but still delicious. If you'd like to "visit" me in New England I'd love it, I enjoy company and new Followers are so exciting. I really enjoyed my visit today, and so happy to have found your blog!

  9. Mmmm. I make a cake similar to this, but with oatmeal and cinnamon and the same topping. So good. I'll have to try the orange one now.

  12. My mother-in-law made this and we had it at their house last weekend. It was delicious and I thought it tasted very similar to an orange-coconut cake I posted on my blog in May. I like your topping!
