Raisin Applesauce Loaf


I got this recipe from my friend, Doreen. A very moist loaf that could pass for cake with a dollop of whipped cream on top.

Ingredients:
  • 1 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon allspice
  • 2 ½ cup flour
  • 1 1/4 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1 ½ cup apple sauce
  • ½ cup oil
  • ½ cup reserved liquid
  • 2 eggs
  • ½ cup fresh walnuts


Method:
  1. Put raisins and spices in a small pot, cover with water and cook for 20 min. Drain and reserve 1/2 cup liquid.
  2. Combine dry ingredients.
  3. Add applesauce, oil, liquid and eggs, beating two minutes.
  4. Stir in raisins and nuts.
  5. Bake in 2 small greased and floured bread pans at 350° F for about 45 minutes or until toothpick inserted comes out clean.

    7" X 3 1/2". I have made this in three loaves - they are not too high then, but this time I did two loaves and an extra large muffin on the side.=)

  7. It's in the oven right now...thank you so much for the recipe. It smells heavenly! One question, the batter seemed a little sweet, are the loaves very sweet once baked?

  8. Tonya, It should not be too sweet, because I already decreased the sugar by 1/2 cup from the original. I would recommend using unsweetened applesauce.

  9. Anneliese, it is absolutely delicious! Not too sweet at all. I usually wrap quick breads up and let them sit overnight before we eat them, but we just couldn't help ourselves, we have already eaten almost a whole loaf as a late night snack. All 5 of my kiddos give it a hearty thumbs up and my kids are not big raisin eaters.

    Thanks for a wonderful recipe, I am writing it down and adding it to my recipe box as a "keeper".

  12. I needed a recipe for a loaf for the church bake sale, so I chose this one out of the zillions that came up when I googled. It was absolutely fabulous and I've made it twice since then. This is now my fav recipe site! Oh, and the Applesauce Loaf sold within a minute of it being put on the table!

  13. Thank you for this wonderful recipe Anneliese!! I didn't have the right size loaf pans so when that happens I go to my trusty bundt pan. It came out fabulous. I am really enjoying your site. I have also made your wonderful french bread, but I have to tell you it is dangerous to make it unless you have family/guests/friends around or you end up eating most of it yourself.

  14. Great recipe, thanks! I reduced the sugar to 1/4 cup and it was still sweet enough (used unsweetened applesauce)
