Elora's Cheese Bread - Gluten free



Shortly before Christmas my gluten-free granddaughter, Elora, said, "Nanna, what I want for Christmas is Cheese Bread..... it has to be white and soft with cheese in it."
How could I say no? smile....
In the photo above her cheeks are full of the bread and her smile is happy.
She is also quite pleased that the bread is named after her.

Here is the recipe...... (note - I updated this recipe on Oct. 8/2011)

Elora's Cheese Bread
Ingredients and Method

1/2 cup warm milk
1 tsp. sugar
1 tsp. unflavored gelatin
1 1/2 tbsp reg. yeast

(quick stir and set aside to proof)

1 egg
2 tbsp warm water
3 tbsp oil

Mix together the following dry ingredients

1/4 cup white bean flour
1/4 brown rice flour
3 tbsp millet flour
1/4 tapioca starch flour
1/4 potato starch (NOT potato flour)
1/2 tsp salt
1 tsp baking powder
1 tsp xanthan gum
1/2 cup of shredded cheese  -  extra for top of loaf
Blend egg and water and oil in mixing bowl, add the proofed yeast

Then add all at once the dry ingredients and beat on high for a minute or two , then lastly blend in the shredded cheese.

Scape onto a greased baking sheet , and using hands dipped in water shape into a 10-11 inch long log. Sprinkle top with more shredded cheese and cover with plastic wrap.

Let rise for about an hour.

Bake at 375 degrees for about 30-40 minutes or until a nice golden brown.


** if you add your favorite spices (if desired) this makes a nice pizza crust as well. Just smooth dough with a spoon into a thin circle on baking sheet.

  10. I feel so despondent. Here was I, all ready to make this recipe but I lack one ingredient.

    I do not have greased baking sheep.

    I'm sure I don't know how I'd manage them in my small apartment. Do I grease them before I round them up; how about the wool--do I remove it first?

    (Tee hee. The recipe sounded good, but the image of greased baking sheep made me smile. I often do something like this, but it's more catastrophic than funny in my work.

  12. You really had me going there. After all, I spent two days finding "farmer's sausage" and this time I thought...whaaat?! But I was determined. If it's greased baking sheep I must have for this recipe, then I must have greased baking sheep.

    It's my profession to catch these things, although, I've made some doozies in my time too; not the cute kind either. Now my eyes are failing I seem to make all kinds of boo-boos. So far, no livestock.

  14. I have childhood memories of the farmers market in St. Jacobs where my mom would purchase chunky cheese bread and rolled ribs from the women. Sadly I have tried to find a recipe so maybe you will have it on your site one day:D

    You could try this recipe the way it is ... except that instead of the grated cheese, you add cubes of cheese.
    I have done it with chunks of cheese instead of grated and I quite liked it.

    I'm sorry about the omission of cheese amount in my recipe.... I have corrected that ... it is 1/2 cup IN the loaf and then extra sprinkled on the loaf before you let it rise ...

  18. Hi, I recently found out I have celiacs and I have to say this is my favorite website so far. My Grandmother was raised Mennonite and I have some amazing food memories attached to her!!! I can't wait to try some of these recipes! Just as an aside my daughter is also an Elora, kind of a rare name so it was nice to see another pretty girl who shares her name

We heard through Statistics Canada that there was an 88 year old lady named Elora (some years ago) in eastern Canada. Other than that you are the first person to have someone named Elora ... I think it is a pretty name so of course anyone WITH the name is pretty !
