Use fresh fruit of your choice...strawberries, pineapple, grapes, blueberries or peaches.
Pineapple dressing:
- 1/4 cup pineapple juice
- 1/4 cup lemon juice
- 2 eggs
- 1/4 cup sugar
- 1 cup whipped cream
- Beat eggs; add sugar, pineapple and lemon juice.
- Cook in saucepan over medium heat, stirring constantly until thickened. Chill.
- Whip cream and fold into mixture just before serving.
Oh my...I had forgotten about this wonderful fruit dressing. Thanks for reminding us all....we all must have grown up with this one and it is soooo good!

ReplyDeleteThat is the same dressing that my grandma's 7-up salad was made with. You made the lime jello with 7-up, and added pineapple and bananas to it. The dressing went on top, and grated chesse over that. Mmmmm. I love your site and get lots of good recipes, thanks so much!

ReplyDeleteDianntha...I'm sure you could use orange juice instead of pineapple...and it would just be a slightly different citrussy flavour.

ReplyDeleteI'm making this for a shower on Tuesday! I'm going to layer fruit in stem-ware with this dressing and then sprinkle the top with toasted coconut. Should be pretty and delicious! :)
