Greek Salad



I got this recipe from my good friend, Herta K. and it’s the salad that I make most often, even if I just have lettuce, cucumber and some colored peppers. The flavor in this salad is enhanced by the fresh basil, but if you do not have it on hand, just use about 1 ½ tsp of dried basil mixed in with the dressing. For the mustard in the dressing, I like to use a Country Dijon mustard or one that has whole mustard seeds in it.

Ingredients:
  • 1 bunch romaine or loose leaf lettuce, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped green onions
  • 12 pitted ripe olives
  • 3 tomatoes, cut into wedges
  • 1/3 English cucumber, sliced
  • 1 green or red pepper, chopped
  • 1/4 cup fresh chopped basil
Dressing:
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon sugar
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper

  1. Shake dressing ingredients in a tightly covered container. Toss salad ingredients.
  2. Pour dressing over top and toss to coat, just before serving.

    I generally depend on locally made Greek dressing but it is wonderful to have this quick easy recipe on hand . . .since I have changed my mind of the type of salad to make because I am out of dressing. . .

  4. Yum....we love Greek Salad too and it is really good for you...olives, tomatoes, feta...It can be a meal all on it's own. Love the dressing too. I usually add crushed garlic to my dressing and substitute oregano for basil...either way it is a terrific salad. Thanks for sharing it...I am off to get groceries and I need more feta...yum!

    i made it, but with sheep's feta for amy and unfortunately with dried basil it was still really good with that....next time i want to try the fresh stuff. thanks for the post...it was savory and delish. greek is always a hit around here.
