Sugar Cookies

Although we usually use this recipe for Christmas cookies, I’ve found that this is a fun recipe to celebrate many other occasions as well. Over the years I’ve collected a number of cookie cutters and enjoyed such things as taking apple cookies to the teachers, putting dinosaur cookies in little boys’ goodie bags or putting smiles on little girls’ faces with heart cookies.

Ingredients:
  • 1 cup butter, room temp
  • 1 ½ cups icing sugar
  • 1 egg
  • 2 tablespoons milk
  • ½ teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
Method:
  1. Mix butter, icing sugar and egg well in mixer.
  2. Add milk and vanilla, then combined dry ingredients.
  3. Chill in sealed container for one hour. (it will keep overnight, but you may need to let it sit at room temp for a little while after taking it out of the fridge.)
  4. Divide dough into two parts for easier rolling.
 5. Flatten with your hand and then roll out on a floured surface (sprinkling flour on top as well) to about ¼ inch (or slightly less) thickness.

6. Cut shapes with cookie cutters such as hearts, dinosaurs, Christmas trees, turkeys or whatever the occasion.
7. For easy decorating, sprinkle unbaked cookies with colored sugar.
8. Bake at 375° F for about 8 minutes or until edges just begin to look done. Do not over-bake.

Icing:

Mix 2-3 cups icing sugar with 2 tablespoons soft butter or margarine and enough milk to make a medium thick icing. Color with food color drops. Use icing tube with plain tip, pressing gently to “outline” cookies.

  7. I'm curious why a regular cookie sheet was not used. We regularly make that recipe, and my kids always made those cookies at Christmas with grandma; I used the recipe for other season.

I'm thinking the pan with sides would keep the sprinkles from falling off the edge of the cookie sheet.

  9. Jill, I don't know if you'll be checking back, but I gave my granddaughter small sheets to use as her own, while I used my regular ones. Her cookie cutter was also smaller than mine. Somehow the kids prefer having their own little pans to work with and show off later. And yes, if you noticed, there was more sugar beside the cookies than on them!

  10. What is icing sugar? Is that powdered sugar?

  11. Yes, powdered sugar, or confectioners sugar. We call it icing sugar up here in this far off land. =) Are you baking? My daughter by love came by yesterday. She said she had seen the sugar cookies on the blog and wondered where they are. They are her favorite.

I made the dough last night, which made it so easy to work with today, I rolled and my husband did the "cutting" we baked & decorated ~ delicious! They are so smooth & creamy.

  13. I made a cranberry sauce and mixed about a cup in with this batter, added a bit more flour and baked right away (no time in fridge). Dropped by tablespoons on cookie sheet. Pretty pink color and very yummy.
