Yellow Split Pea Soup


Mom has always been great at making soups.  If she invites us for lunch, saying she has made a pot of soup we know we are in for a treat.  This soup is delicious anytime of year and is chocked full of fiber and protein. 

  • 1 tablespoon oil
  • 1 large onion, diced
  • 3 large carrots, diced
  • 3 stalks celery, diced
  • 2 cloves garlic, minced
  • 8 cups / 2 liters  broth of your choice, (vegetable, ham, chicken)
  • 2 cups dried yellow split peas, rinsed and drained
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay Seasoning
  • 2 - 3  cups chopped fresh kale leaves
  • juice of 1 large lemon
  1. Heat oil in a large pot over medium heat.  Add onion, carrots, celery and garlic.  Stir until softened.  
  2. Add broth, yellow split peas, seasonsings and bay leaves.
  3. Simmer 2 hours.  Add chopped Kale in the last 15 minutes.
  4. Add lemon juice.

  3. Use vegetable broth and you have an excellent vegetarian meal. You can substitute lentils if you don't have peas.

  6. Great minds "eat" alike ... I made split pea soup today too. I had a ham soup bone in the freezer and decided to use it. I didn't have kale in my recipe - that sounds like a wonderful addition.

  7. Just the same as I make green split pea soup except I have not put in the Old Bay Seasoning nor the kale. I do use ham bones when I have one. Next time I'll be adding the Old Bay! Thank you.
