This salad is perfect anytime or to take along for pot luck meals. You can mix everything ahead of time except for the corn chips which you add just before serving. It's a great recipe to keep in mind for those summer grilling days. With our cold temperatures, nobody here is thinking of grilling anything these days.
Ingredients:
- 1 bag (10 1/2 oz) chili cheese flavored corn chips
- 2 cans whole kernel corn
- 1/2 cup peas, cooked
- 3/4 cup mayonnaise, add another tablespoon or two if you like it more creamy.
- Mix all ingredients together until well combined.
- Serve immediately or if you want to take it to a pot luck remember to add the corn chips just before serving.
This salad is yummy with a nice crunch and looks so quick and easy for my next backyard BBQ party...although I'll have to wait a few more months to be outdoors!
ReplyDeleteHey, don't recall seeing this dish at our potluck supper yesterday..although we did have enough food! Dish looks yummy and easy to prepare..will have to make it for our next gathering!
ReplyDeleteblack beans and diced tomatoes would make good add ons. or a little salsa in the mayo.
