This hash brown dish takes a few minutes to mix and is a good addition to a brunch or main meal. Last Sunday morning I added some peeled and cut farmer sausage in a separate dish with a little water. I covered both dishes, pre-set the oven and we came home to a ready meal.

Ingredients:
  • 1 bag (2 lb) frozen hash browns
  • 2 cans cream of mushroom
  • 1 cup sour cream
  • 2 tsp. fine onion flakes
  • 1/2 teaspoon salt,
  • pepper
  • 2 cups grated cheese
  • sprinkle Parmesan cheese
  • paprika

Method:
  1. Mix all ingredients in a bowl, then spread into 9x13 or 2 quart Pyrex dish. For four people I do half the recipe in a 1 quart casserole dish.
  2. Sprinkle with Parmesan cheese and paprika.
  3. Bake 1 hour at 375° F.

    Variation: Add cubed cooked ham or bacon bits.

  5. The food looks yummy and I wish I knew how to crochet. I make knitted dishcloths. They don't require total attention while making. Now my cereal is not holding up and I'd like to have some of your recipe.

  15. This looks really good and quick. I do a potato dish with raw potatoes with layers of sour cream, bacon, green chiles, onion, garlic, and cheese. I might try this recipe but add the green chiles. Thanks for sharing.

  17. I find this casserole works well with just 1 can of soup and a bit of broth or water to rinse out the can and then the sour cream(if anyone is trying to cut calories :). the canned chilis are a nice addition too. nice potluck dish.

  21. Love this recipe, it my go-to dish when I need something for a comforting side dish. I substitute 1 can of cheddar cheese soup for the cream of mushroom, sometimes I add equal parts of aged cheddar and gruyeré cheese along with smoked bacon lardons (pre-cooked), Epicure Toasted Onion and then make a topping with melted butter with Cornflake crumbs or crushed Special K and Parmesan cheese....not for the calorie conscious!!

  25. When I saw this dish, I knew I had to try and make it since it looks similar to a dish my mother-in-law makes. I have had made it and I have to say it wonderful as my MIL's Hungarian version. Thank you for sharing. This is writing in my kitchen cookbook.

    Yum! I love hashbrown casserole! I make something very similar except I use cream of chicken soup (I don't like mushrooms).
    I like to change it up with whatever I have around but the most common extras I use are frozen veggies (peas or corn) and farmers sausage. I cook it all in one pot and have a yummy one dish supper.
    I also top it with some panko crumbs or my Cajun shake n' bake and a little bit of cheddar cheese. Oh man, why didn't I take this out of the freezer for supper tonight when I was home at lunch time!?
