Chicken & Rice Casserole

This is our one time family favorite. Just make sure that you always have these ingredients in your pantry and you'll realize how quick this puts together and you have one tasty chicken dish.
Do you have five minutes? Yes, that's all this requires. This recipe comes from my Central Heights Cookbook. Add some broccoli and a fresh salad.
I have often made this Sunday morning and off to church we'd go, only to walk into a home smelling with aromas that makes you want to eat right away. And all being said...You will be eating shortly.

Now remember the Olympics countdown is here and so start today with your grocery list. It will save you fretting about, wondering what to make while you want to enjoy the the winter games.

Chicken and Rice Casserole
  • 1 Cup white rice (uncooked)
  • 1 pkg. Lipton onion soup
  • 1 can cream of mushroom soup
  • 2 cups water
  • 4 skinless chicken breasts
Butter casserole. Put rice on bottom, then chicken. Next add water and soup. Cover.
Bake in 350 degrees for 2 hours.

Simple ingredients.

Bake in the oven for 2 hours.

I usually double this recipe. It's even great for leftovers.

  9. This version looks great and so simple.

    One of my MIL's "go to" casseroles was very similar to this except she used the Uncle Ben's original wild rice pkg. and added enough white rice to make one cup.

    She used split chicken breasts and added both mushroom and chicken (or celery) soup to make ir saucy.

    Her original recipe called for melting a stick of butter and pouring over the top but I think she only did that when company was coming after my FIL had a heart attack (there was a lot of butter in those old recipes).

    This one looks perfect for our small family, will try it soon.

  10. Tried this today and loved the ease of it. Also added celery/onion/mushrooms to the rice to doctor it up a bit. Cut back on the soup mix (a full packet is a little overpowering for chicken I think). It was an ok recipe; great for it's ease in preparation; not one I'd really make for company though....
    I like reading about recipes I can prep before church and come home to a ready meal esp. if we want to invite someone over last minute....

  12. This is a quick and easy...I agree with the comment above. I would not prepare this for company, but i know that my DIL loves it, so play with it, add a few things and subtract a few and you'll find your perfect menu.

  13. I like this one too.I haven't had this dish in so long but it is in the oven right now! I don't use the onion soup mix.I also add mushrooms, onions, garlic powder and paprika.Also excellent with pork chops! All three of my kids love this meal so it is a real hit at my house! Thanks for the dinner idea, Jen

  14. I think this is a wonderful recipe and I'd serve it to company in a heartbeat. I'm one for getting folks around your table and serving them something made with love, a hearty meal that warms the heart and the stomach. I love the simplicity of this meal and think I'd enjoy my company all the more because I could spend more time with them and less in the kitchen!
