Corinne's Decadent Chocolate Brownies

This is a recipe that I have posted on my What Matters Most blog

My friend Corinne had sent me the recipe and it works out beautifully in tiny muffin tins. Brownie bites are perfect for picnics.

  • 3/4 cup butter, melted
  • 1/2 cup cocoa
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour

  1. Stir in all ingredients in order listed.
  2. Spread into a well greased pan 9 X 13.
  3. Bake at 350 degrees for 30 minutes. If using small muffin tins, watch carefully to see that they have puffed and then they are nearly done.

  3. My family teases me because for years now I have tried many, many brownie recipes. I told them one day I would find the ultimate brownie recipe and wouldn't stop until I did. I baked these this morning and my kids and I love it! My search is finally over. I am filing this in my recipe book but I changed the name. I call it 'The Ultimate Brownie'. This way I know this is THE one! Thanks!

  4. Just had another brownie. Mine is not as thick as the one you have pictured. It looks only about half as thin. Next time I will either double this recipe or make it in a 8x8 pan. The flavor is perfect though.

  10. I am a Canadian, living and working in Taiwan for a couple of years. I love to bake and cook, and enjoy Mennonite recipes. Most people here don't bake so there is no oven in most rental apartments. However, one can buy a small oven, rather like a giant toaster oven. The heat is not as consistent as a regular oven, but it does the job with some adjustments.
I love chocolate and brownies and have tried many recipes. Usually they all have some uncooked bit in the centre no matter how long I cook them.
I tried Corinne's Decadent Chocolate Brownies, and though I had to cook them for an hour, due, I think to the sea level here, they did come out all cooked with a nice texture and fabulous taste. I also appreciated the quick preparation as I have no mixer or blender available, just my trusty wire whip and wrist!
I also make my own bread as I don't enjoy the white, sweet bread the Taiwanese favour. My little oven gets a heavy workout.
Thank you for your recipes, I do enjoy them and your website.

  11. I have made these into two-bite brownies, many times. Sometimes they turn out perfect and other times they get a huge hole in the center of them. Any suggestions?
