with bacon and tomatoes. It was delicious.
- 2 servings of halibut
- salt and pepper
- basil
- 1 tablespoon Olive oil
- 2 thick slices of bacon, chopped and partially fried.
- 1 medium fresh tomato, seeded and chopped
- 2 tablespoons roasted red pepper, chopped
- 1/3 cup freshly grated Parmesan cheese
- 1-2 tablespoons chopped black olives
- Place a piece of parchment paper on a baking pan.
- Preheat oven to 350 degrees F.
- Place fish, skin side down on pan.
- Brush with olive oil.
- Sprinkle with salt and pepper and a generous amount of basil.
- Bake in oven for about 5 minutes..
- Remove fish from oven and top with bacon, tomatoes, roasted red peppers and another sprinkle of basil.
- Return to oven for another 4-6 minutes.
- Top with Parmesan cheese and continue to bake until fish flakes when tested with a fork.
- Top with chopped olives and serve.
Makes two servings.
Interesting combination of flavours. This looks absolutely delicious.
