I had some Halibut in the freezer that my husband had caught. I thought it might pair well
with bacon and tomatoes.  It was delicious.

  • 2 servings of halibut
  • salt and pepper
  • basil
  • 1 tablespoon Olive oil
  • 2 thick slices of bacon, chopped and partially fried.
  • 1 medium fresh tomato, seeded and chopped
  • 2 tablespoons roasted red pepper, chopped
  • 1/3 cup freshly grated Parmesan cheese
  • 1-2 tablespoons chopped black olives
  1. Place a piece of parchment paper on a baking pan.
  2. Preheat oven to 350 degrees F.
  3. Place fish, skin side down on pan.
  4. Brush with olive oil.
  5. Sprinkle with salt and pepper and a generous amount of basil.
  6. Bake in oven for about 5 minutes..
  7. Remove fish from oven and top with bacon, tomatoes, roasted red peppers and another sprinkle of basil.
  8. Return to oven for another  4-6 minutes.
