Pomegranate Salsa

This is a different type of salsa that is refreshing with lots of good crunch.

Ingredients:
  • 1 cup pomegranate arils
  • 1 cup seeded and chopped English Cucumber
  • 1 cup diced fresh firm pear
  • 1/4 cup diced red onion
  • 1 jalapeno, seeded and diced
  • 1/4 cup chopped cilantro
  • Juice from 1 lime
  • 1/2 teaspoon salt

Method:
  1. Combine pomegranate, cucumber, pear, onion, jalapeno, and cilantro.
  2. Add salt and mix well.
  3. Add fresh squeezed lime juice and mix well.
  4. Serve with tortilla chips.

Tip: The cup like shaped tortilla chips would work better for this salsa. You can substitute jicama for the pear if you'd like.

  2. Pear and pomegranate go well together. I've made a dessert with that and yogurt/honey dressing.

  3. just a question about the pomegranate arils - can you purchase these on their own or do you need to buy whole pomegranates and extract the arils? This looks scrumptious!
