Happy 4th of July to all our U.S.A. Readers! I'm sharing this old time favorite recipe that has been circulating for years and that many of you might be familiar with. This is a picnic, potluck and barbecue favorite!
Ingredients
- 1 cup sugar
- 1 cup Karo Light Corn Syrup
- 1 cup Creamy Peanut Butter
- 6 cups Rice Krispies
- 1 cup Butterscotch Chips
- 1 cup of Semi-Sweet Chocolate Chips
Method
- Bring 1 cup sugar and 1 cup Karo light syrup just to a boil mixing well.
- Take off heat and add 1 cup peanut butter and mix till smooth.
- Add 6 cups Rice Krispies and mix till all the Krispies are coated well.
- Put this mixture into a well greased 9×12 pan and press down evenly into the pan.
- Empty chips into microwaveable bowl and microwave at 3-30 second intervals, mixing well after each 30 seconds.
- Mix together till smooth.
- You can use the double boiler method to melt your chips if you prefer.
- Pour entire mixture on top of the pressed down Rice Krispies and spread to cover.
- Cool, cut and enjoy.

ReplyDeleteAh, memory time! In our family we call these "Basketball Bars" now. Lo these 40-some years ago my brother, the tall skinny basketball player, would come home some evenings with the news that he needed to bring some baked goods to school the next day for a bake sale for the basketball team. Mom, being a smart woman with very little time for extra runs to the grocer, soon got in the habit of always having the ingredients for these bars on hand, because they could be made in the time between brother coming home and mom falling asleep! In a friendly note I must add that I was disappointed the Mennonite booth at Castle Park in Port Coquitlam on July 1 did not have it although they seemed to have other cookbooks. It may have been convenient for others to purchase it there also.

ReplyDeleteI can just imagine and vouch for how good these are because I make a similar one in a roll version. And yes, they do freeze well, but also keep in the fridge for a long time .... if you hide them... that is. =)

ReplyDeleteGreat recipe! A favorite at our place a long time ago...and one I had almost forgotten about. My sis-in-law brought them to our family reunion this past weekend...and they still taste as good as ever.

ReplyDeleteWe call these Scotcheroos too and they are a fave with everyone...I especially like leaving a bit in the pan to eat on a spoon!
ReplyDeleteI make a double batch in a jelly roll pan to freeze for the holidays...they freeze wonderfully...
I made these a couple of weeks ago, but instead of peanut butter, I used Nutella. YUMMY. They freeze really well. We just have to pop them in the microwave to soften them a little bit, otherwise they are too hard.

ReplyDeleteYou could easily tag this "gluten free." Rice Krispies now makes a gluten-free version, or--my personal favorite--you can substitute rice Chex for the Krispies. It tastes the same, and doesn't get hard a day later.

ReplyDeleteJust my opinion, but we have always made these with Special K cereal. The flakes leave lots of room for the melted topping to ooze into. And as the name suggests, the Special K makes these a lot more "special" than Rice Krispies.
ReplyDeleteI have made them for years but have a little twist. I add the butterscotch chips to the karo syrup and peanut butter.....just as good or maybe a "tad" better.

ReplyDeleteI made these this past week and although they are very delicious, they get so hard you can hardly chew them. Is it because of the corn syrup? Is there something I can put in the dish with them that will soften them a bit?
ReplyDeleteMake sure you don't cook the corn syrup too long. Just let it come to bubbles on the edges and take it off the heat...

Here is the trick I use for perfect ones. 1 min in microwave for corn syrup then 1 more min with peanut butter and corn syrup. Never hard always chewy.
