Green Beans with Cranberries and Walnuts



This recipe is a lovely compliment for your Christmas dinner. The citrus brightens the flavor of frozen green beans and gives them a fresh taste.
Serves 6-8
  • 1 kg frozen green beans
  • 3 cloves of garlic, slivered
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • handful of dried cranberries
  • 1 cup of toasted nuts, chopped (walnuts were my choice)
  • 1 lime, zested and juiced
  1. Roast the green beans and garlic drizzled with olive oil  at 425 for about 20 or minutes or until they begin to turn color.
  2. Toss with the lime zest and juice, add cranberries and toasted walnuts. Serve on a platter.

  2. Oh my...these look wonderful! Like Rosella I've never roasted green beans either. And, I've never used frozen green beans. I love the combination of flavours you've pulled together. I'm actually going to try a small recipe of this tonight as a pre trial for Christmas dinner.

    1. Barb B, I have not personally tried it so I can't say for sure. Are canned beans are already pretty soft? I wonder if they would get too soft doing it this way. The best way to know is to try and then you can let us know how it turned out. Maybe there are others who would like to know too.

  6. I love the look and taste of adding nuts, cranberries & citrus (maybe even orange)!! I frequently cook frozen green beans on the stove with just a bit of butter or olive oil (no boiling in water). It might be a nice option for this recipe if you oven is already full of other holiday dishes.

    1. That is a good idea. I also switch up the citrus for a change of pace. Lemon, lime, orange, it all works. I have even added feta cheese at the end.
