This recipe is my friend Karin's mother's recipe. When I tasted them I asked for the recipe since Bar cookies are so quick and easy, perfect to take for school lunch or after school snacks. Plus the sweet butterscotch flavor just adds to the melt in your mouth goodness.
- 1 cup margarine or butter
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 1/4 cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup chocolate chips
- Whip together margarine, brown sugar, white sugar til light and creamy.
- Add eggs one at time beating after each addition.
- Add vanilla.
- Combine dry ingredients, add to butter mixture mixing until all the dry ingredients are well mixed in.
- Stir in chocolate chips.
- Pour into a greased 9x13 pan and bake for 20-25 minutes at 350.

ReplyDeleteShould there be some butterscotch chips added, also? Just one cup of chips doesn't sound like a lot for a 13x9 pan....
ReplyDeleteThe recipe doesn't call for butterscotch chips but you can certainly add some or more chocolate chips. The butterscotch flavor comes from the butter and brown sugar.
