Flashback Friday - Peaches and Cream Muffins

For flashback Friday I chose my previous recipe for Peaches and Cream Muffins.These muffins are 'wonderfully moist'. If you wish you could use half whole wheat flour to make them healthier. This time I chose to leave them plain. Sometimes I add a streusel topping.
  • 2 eggs
  • 3/4 cups sugar
  • 2/3 cup oil
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 cup chopped peaches, canned or fresh
  1. Beat eggs, add sugar gradually. Continue beating while adding oil. Stir in vanilla.
  2. In separate bowl mix together flour, baking soda and salt.
  3. Stir dry ingredients into egg mixture alternately with the sour cream only until dry ingredients are moistened.
  4. Fold in chopped peaches.
  5. Spoon into greased muffin tins.
  6. Bake at 400ยบ for 20 min.
  7. Yields: 18 medium or 12 large.
Streusel Topping..(optional)
  • 1/2 cup sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 2 tbsp soft butter
  1. Mix till crumbly and sprinkle on muffins before baking.


  1. I love peaches, a favorite since childhood. I haven't had breakfast yet and I see these wonderfully moist muffins and my stomach is growling like a starving bear. If I have peaches on the shelf, I'll have these muffins on a plate very soon!

    Like you, I gotta tweak the recipe..I'll try it as a waffle recipe! All muffin recipes work as waffles too...especially when you are in a hurry and don't want to heat up the oven!

  7. I'm just curious if you'd add more liquid to the recipe if you used some white whole wheat flour so they retain their moisture. If so, what liquid and how much?

  8. Oh yeah...all muffins and quick bread recipes as long as there is a little oil in the recipe. The sour cream would do it in this one, or you could add at tad bit of oil.

    I love waffling pumpkin bread recipes. Much quicker to make and serve up.

    Try making french toast in the waffle iron too. Corn bread is really good...perfect to make and then pour chili over the grids. Chocolate muffins as waffles with ice cream on top...yum.

    Any savory muffin can be waffled, then baked to make crispy chip for dip. A book called "Waffles Morning Noon and Night" has some amazing ideas in it!

  9. Brook..I don't add more liquid when I use half whole wheat flour although they are a bit more dense. You get slightly more moisture if you use canned peaches. So maybe you could try less than half the amount of whole wheat and see what you think.
    Jill..I have made french toast in the waffle iron but haven't tried I'm wanting to try that! And the family won't guess they're eating muffins, right?

  16. I baked this yesterday to take to my husband's quartet practice last night. They were wonderful! Everyone loved them. I used some frozen peaches and I added the strusel topping. Only problem is that my strusel slid off of the muffins and onto my muffin pans where it stuck. I guess that was a problem -- my hubby stood and peeled the stuck-on pieces off and ate them. Next time I will push the strusel down into the batter.

  18. Paula Deen also has a recipe for Peaches and Cream Muffins but without the eggs. I will try this one first, as I'm sure the eggs will make them even better. Can't wait to try them. I LOVE muffins!!
