Recently I put these sandwiches together for two of us. I had an idea of what I wanted and used what I had in the fridge. A nice change to the ordinary.
Ingredients:
- multigrain rolls
- Caesar salad dressing
- roasted sweet pepper
- roasted chicken breast
- Danish Camembert cheese
- ripe avocado
- spinach
Method:
- Spread one side of open rolls with dressing and top with a few thin slices of roasted pepper.
- Place a few thin slices of chicken on the other side.
- Top both sides with a slice or two of cheese
- Bake in 400 F oven for 5 - 10 minutes, until cheese melts.
- Top with sliced avocado and spinach leaves and enjoy!
It is the bread chosen for your sandwich that has really caught my attention-absolutely delightful.

ReplyDeleteWOW! what a great sandwich idea ~ thanks for sharing!
ReplyDeleteI had one of these at a winery in Niagara On the Lake a while back. Delicious with fresh chopped cilantro.
ReplyDeleteThis looks excellent and the bread terrific!
ReplyDeleteI love a great sandwich and this one looks scrumptious!!
ReplyDeleteMy daughter-by-marriage loves avocado so doubtless she would enjoy this and the rest of us will enjoy it also. Thanks for sharing!
ReplyDeleteThis sandwich is super yummy with dried cranberries and (spicy) ranch dressing as well! One of my favorites:-)
ReplyDeleteMan, your refrigerator is a lot more interesting than mine!
ReplyDeleteSO lovely to see a multigrain bread that's actually multiGRAIN, not multiFLOUR!
ReplyDeleteEven though I've moved back to Australia, I continue to be inspired by your recipes..and to introduce them to a whole new range of people who've never come across Mennonite cooking before. :)
Looking forward to trying these out as a picnic on the back lawn in these last weeks of Summer.
Mmmmmm Anneliese - that looks and sounds wonderful! I was just watching the new foodie series called Taste where they made sandwiches - your's would have been a winner for sure!
ReplyDeleteThe whole sandwich looks good but THOSE ROLLS!! Nom nom nom. Do you know a loaf of decent bread here is $5 to $6? I think I have to start making my own, regularly.

P.S. Are these buns on the site somewhere? ;)

Sahron, they are not, but they may need to be something I will work on. A nice challenge.
DeleteAs if you need more challenges. :) But I do hope to see a recipe at some time.

I'm also interested in the bread. Is it some kind of ciabbata? It looks great. I'm sure it won't take long for one you girls to come up with a recipe. Looking forward to that posting
