I made these delicious cupcakes especially for my son, he loves, really loves peanut butter. The frosting is nice and fluffy and a perfect finish for these cupcakes.
Ingredients:
- 1/3 cup butter, softened
- 1/2 cup smooth peanut butter
- 1 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup plus 2 tablespoon buttermilk
- Line a muffin tin with paper cupcake liners and spray with cooking oil.
- In a large bowl cream butter, peanut butter, and brown sugar, until light and fluffy.
- Beat in the eggs one at a time and stir in vanilla.
- Blend flour, baking powder and salt and stir into the creamed mixture alternately with the buttermilk. Mix just until blended.
- Scoop batter into prepared muffin tin.
- Bake in a 350Âș oven for 25 minutes or until toothpick inserted comes out clean.
- Remove cupcakes to rack until completely cool before frosting.
- 1/4 cup butter, softened
- 1/2 cup creamy peanut butter
- 2 cups icing sugar
- 3 tablespoons cream
- 1/2 teaspoon vanilla
- Peanuts, chopped (optional)
- Beat butter and peanut butter until light and fluffy.
- Slowly beat in icing sugar alternately with cream. Add vanilla.
- Beat until frosting is light and fluffy.
- Decorate cooled cupcakes with frosting, a bit fancy if you like or just plain will do
- Sprinkle chopped peanuts on top.
- Yield: 12 cupcakes

I swirled a little icing on top and got rave review from my husband and two of the hired help. I gave my copy to one of them and printed another one for myself. A definite repeat. It was that good. ReplyDeleteI was really excited to make these today but found the cupcakes quite dense and the icing, much too sweet. I halved the icing and it was more than enough for the 16 cupcakes this recipe made. Sorry, but I don't think this is a repeat for me. I guess I just like sweet things that are less sweet!
