
For years this has been a "for sure" when planning the holiday menus. The Puff is light and creamy with a crisp topping and "just" a hint of sweet.
- 6 cups Yams (about 4 medium)
 - 2 tablespoons butter
 - 2 eggs . . beaten
 - 3 tablespoons flour
 - 1 tablespoon brown sugar
 - 1 teaspoon baking powder
 - salt and pepper to taste
 - 1/2 cup of Panko bread crumbs
 - 2 tablespoons Butter melted
 
- Put yams on a baking sheet and wrap them in foil and bake them at 350 F for an hour or until very done. I slide a sharp knife into the largest one to ensure it is soft enough to mash.
 - After the Yam has been measured, mash it really well with a potato masher.
 - Add the butter and eggs. Beat well. (this can be done the day ahead and wrapped and kept cold)
 - Combine the flour, sugar, Baking Powder, salt, pepper.
 - Stir into the mashed yams.
 - Butter a flat casserole dish and spread the yam mixture into the pan.
 - Combine the crumbs and butter and sprinkle over the Yams.
 - Bake at 375 for about 45 minutes or until golden browned and puffed.
 
Say...this looks good. Good thing Christmas is right on the heels of Thanksgiving so I can try out more holiday recipes....but then....who needs to wait for a holiday for this?!!!
ReplyDeleteI like this recipe Lovella, it has little sugar so that is good. I find the yams sweet enough on their own but a little extra sweetner does seem to enhance the flavour.

This Thanksgiving I added a little maple syrup and butter to my yams and that tasted wonderful..thanks to Trish for that tip!
