Cucumber Salad

This is a quick way to add a salad to any summer time meal. 
  • 1 long English cucumber, sliced thin
A mandolin works really well for this but you can also just use a sharp kitchen knife.

Dressing:
  • 2 tablespoons cider vinegar
  • 2 tablespoons white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon sugar
  • 1 1/2 tablespoon olive oil
  • 2 tablespoons fresh dill, chopped fine
  1. Place all dressing ingredients in a jar and shake well.
  2. Pour over sliced cucumbers. Serve immediately.

  1. I really appreciate this recipe! We're growing our own cucumbers this year and the vines are loaded! We haven't harvested any yet but we're getting close! Louis Dean dearly loves cucumbers so I'm going to make this dressing and have it ready! I'm pretty sure we're going to have so many that we will be eating cucumbers every day! Just like we're eating tomatoes now! We are loving our garden!

  2. Me, too. I'm glad to have this recipe. I can never remember my mother's recipe for sweet & sour cucumbers, and every time I make it, it's never quite right. So I will use yours!

  3. That cucumber salad dressing sounds really good. We usually use a creamy dressing but I think I'd like this fresh and bright one for a nice change.
