Meatloaf- Bev's Favourite


My friend Delores submitted this meatloaf recipe to a church cookbook we assembled back in the 1980's and it's been my favourite ever since.(I will admit to tweaking the original recipe a bit.)
The grated carrot makes it very moist and is a sneaky way to get your children to eat their vegetables.
  • 2 eggs 
  • 1/2 cup milk
  • 3 slices brown bread crumbled
  • 1/2 cup finely chopped onion
  • 1/2 cup finely shredded raw carrot
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 1/2 pounds lean ground beef
  • 3 tablespoons brown sugar
  • 1 tablespoon dry mustard
  • 1/4 cup ketchup
  1. In a large bowl, beat eggs, add milk, bread, onion, carrots, Worcestershire sauce and salt and pepper.  Mix well until bread is mostly incorporated.
  2. Add ground beef and mix well, making sure all ingredients are evenly distributed.
  3. Pack into a glass or metal loaf pan or pan of your choice.
  4. Mix brown sugar and mustard in a small bowl.
  5. Add ketchup and mix again.
  6. Spread ketchup mixture evenly over the top of the meatloaf.
  7. Bake in preheated 350ยบ F oven for about 1 hour.  
  8. Lift loaf out of pan onto serving plate and let stand 10 minutes before slicing and serving.

  2. Yummy! I;m 76 yrs. old & your recipe is like my mother's was. I have never been able to get mine to taste like hers. Thank you for posting this: The brown sugar & the mustard is what I didn't add to my catsup.

    1. Saundra, I have some of the same feelings, only it's not my mother's recipe, but other people's meatloaf. :) I like peppers, onions and carrots in mine but it never taste as good as theirs. lol Somehow we all cook a little differently.

  4. I like the idea of adding carrots!! I've heard of adding ground raisins to meat loaf - I think it is supposed to add a slightly sweet caramel flavor :)
