Ingredients:
- 1 cup butter softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups applesauce (I used unsweetened)
- 4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup chopped walnuts
- Preheat oven to 350 degrees.
- Cream butter and sugar.
- Add eggs one at a time incorporating well and mix in vanilla.
- Stir in the applesauce.
- Combine flour, baking soda, salt and spices.
- Stir into creamed mixture.
- Fold walnuts in.
- Fill greased or paper lined muffin cups 3/4 full.
- Bake at 350 degrees for 20-25 minutes.
Yield: About 30 small muffins.
They look scrumptious. I don't think I'd add the nutmeg or the walnuts (they make my mouth feel sensitive) but WHAT a great recipe! Thank you, Ellen b.!

ReplyDeleteWonderful. I think I'll try splitting the recipe in half, as I don't need that quantity. And by the way, aren't muffin liners handy? I used to carefully grease each cup, but now just use the paper liners. So much easier for clean-up!

ReplyDeleteI made these yesterday, since I had homemade applesauce in the fridge I needed to use up. I lessened the white sugar to make up for the sweetened applesauce and I sprinkled the tops with cinnamon sugar because my son can't have enough cinnamon. My teenage son and his friend had 6 when they came out of the oven. These are a keeper!
