Winter Cabbage Salad

This salad is something my husband just loves and our kids like as well. It is so simple and can be made with any veggies you have on hand. It can be made and dressed and just get better if you have leftovers and want it the next day as opposed to a salad made with lettuce that would get soggy by the next day if it had dressing on it. I will not give you an amount for the ingredients, but make it according to what you think you will need for the amount of people being served. In this salad I had-

  • One bag of cole slaw mix
  • Carrots
  • Peppers
  • Radishes
  • Snow Peas
  • Broccoli
  • Broccoli stems, cut into julienne strips
  • Cucumbers
  • Tomatoes
  • Green Onion
  • Italian dressing
This is so simple. Mix what ever veggies you enjoy eating with enough Italian dressing (or any favorite dressing of choice), creamy or vinaigrette and Voila, Salad is served.

  6. I am making this to go with my beef stroganoff tonight! I have always just done the coleslaw mix with the italian dressing and fresh ground black pepper, but I love the idea of adding the other veggies with it! Thanks!
