Quinoa Side Dish

Quinoa has become a very popular healthy food choice. It's a protein that has a fluffy texture with a slightly nutty flavour when cooked. It is interchangeable in most recipes that call for cooked rice. This recipe is packed full of protein, and makes a wonderful meal in one dish, a side dish or addition to a potluck. Try this served cold salad!

  • 3-4 cups cooked quinoa, according to package directions
  • 1 cup canned corn
  • 1  can black beans, rinsed well
  • 1/2 red pepper, diced
  • 8 oz sour cream
  • 1/2 cup chunky salsa
  • 1 cup grated cheddar cheese
  • 1/2 tsp salt
  • 3-4 grinds fresh pepper
  • cilantro, parsley or green onions for garnish
  1. Cook quinoa according to package directions. Allow to cool.
  2. Stir in remaining ingredients and stir to combine.
  3. Put mixture into a greased casserole and bake at 350ยบ for 30 minutes or until heated right through.
  4. Garnish and serve.
This can be made ahead and keep in the refrigerator for 1-2 days. Heat and serve, or try it cold as a salad. Serves 4 as a meal, 6-8 as a hot side dish or cold salad.

  1. I am always looking for new ways to use quinoa. This sounds perfect. Thanks!

  2. We have a relative of quinoa called lambs quarter or goosefoot that is a weed but gives us better greens than spinach. I suspect that the quinoa plant would give very good spring greens even on poor ground if it is anything like it's wild cousin.

  3. I love quinoa too and your recipe sounds wonderful! Love that it can be made ahead of time too. Thanks for sharing!

  4. Happy to hear of a hot quinoa dish - so far I have only tried the cold salad type, but am looking forward to trying this out for supper!

  5. Looks good. I'm wondering in the sour cream could be replaced by greek yogurt though.

  6. Someone asked about replacing greek yogart for the sour cream....try it! Let us know.

  7. Looking forward to trying this! I admit to being a little tired of my usual way of making a quinoa dish, which is roasted root veggies, EVOO, seasoning (usually Montreal Steak Spice) and quinoa. My only other way that I really like is a quinoa lasagna that is wonderful but extremely time consuming and somewhat costly. And now that my husband is gluten free, quinoa is definitely on my menu more than our usual pasta. So thank you for giving some variety to try!

  8. Very nice recipe. Thanks. I replaced sour cream with Turkish joghurt.

  9. I have just made your quinoa casserole for tonight's dinner. My husband couldn't stop eating it! Thanks for that. I had quinoa in the cabinet for awhile and was looking for some recipe to use it in. Loved it!

  10. I just made this for my Potluck tomorrow at work! I was looking for something a little more unique and I think this will hit the spot! :) Thanks for the great recipe idea!

  11. Alison let me try this and it is delicious!!

  12. Fantastic side dish! Husband gave it a big thumbs up (and I do too!)

  13. Made this a while back - amazing! Hope you don't mind I posted my variation on my own food blog with a link back here!

  14. I think I've been making this since you posted it, and as I put it together this evening it seemed I should thank you. It is in regular rotation in my house, and pleases everyone from the 2 year old to the grandparents. The kids will take it to school tomorrow in Thermoses, and I'll be happy knowing they have hearty, healthy lunches to keep them going. Thank you for this one!!
