Cheeseburger Soup

Nothing warms the tummy like a hearty bowl of soup
served up with fresh baked bread.
Why not bake up an apple pie or crisp to finish off the meal.
Cheeseburger soup is thick and rich,
and will have your kids asking for a second bowl.

Ingredients:
  • 1 pound ground beef
  • 1 1/2 cups chopped onion
  • 1 1/2 cups shredded carrots
  • 1 1/2 cups diced celery
  • 2 tsp basil
  • 2 tsp parsley flakes
  • 8 tbsp butter, melted
  • 6 cups chicken or vegetable broth
  • 8 cups cubed potatoes
  • 1/2 cup flour
  • 4 cups Velveeta cheese
  • 4 cups milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup sour cream
Method:
  1. In a large heavy soup pot brown beef. Half way through browning add onions, carrots and parsley. Continue to brown until vegetables are tender.
  2. Add broth and potatoes and bring to a boil. Turn down and simmer until potatoes are tender.
  3. In microwave or a small pot on stove top melt butter and stir in flour until smooth. Stir this into the hot soup.
  4. Cut Velveeta into cubes and add to hot soup along with milk, salt and pepper.
  5. Stir over low heat until cheese has all melted. Remove from heat.
  6. Garnish each bowl with a dollop of sour cream.
Soup will scorch easily so make sure you turn your burner to simmer once potatoes are cooked and you begin to add the milk and cheese. This soup can be reheated very slowly. Does not freeze well.

  1. Yum! This is a favorite in our house. I like the tip of melting butter in microwave and then adding the flour to that for the thickener...sounds easier than dirtying up another pot!

  4. Ohhhhh, I've never heard of such a thing, but I'm snagging this today. My hubby and I are both on an eating plan, but it allows us one cup of soup daily. I think this will be our one cup. I'm pretty sure that I can cut the recipe to make it work for us. Thanks so much!

  9. Is there a different cheese I could use as we do not do Velveeta or cheese slices? Our family calls it plastic cheese:-)

  13. Melanie, you asked about using a different cheese. I think you could use cheddar. It would just take on a slightly different flavour.....it would turn out just fine!

  16. This sounds wonderful, but there's only two of us. Since I'm working on my masters, I don't have a lot of time to cook. I like to make large quantities and freeze meals for later. You mentioned that this does not freeze well. What happens if you freeze it?

    Huh, I bet you could freeze the soup minus anything dairy. While reheating the soup, add the milk, and at the last minute, the cheddar cheese. Then that dollop of sour cream.

  19. I made this for my family last night, and it was a huge hit. However, it seems like a more appropriate name for it would be "Loaded baked potato soup" because that's what it tastes and looks like. No matter what the name, it's a delicious soup, perfect for a fall or winter night. Also, I reheated it in the microwave today for lunch and thought it reheated great. Thanks!

  20. Just getting back with our two-thumbs up report. I finally made this last night for supper. I did cut the recipe in half without a problem and we still ahve leftovers and we had company for supper to boot. We loved it and so it becomes a keeper. Thanks again.

  21. This is a favorite soup in our home. We've changed it a little by putting the potatoes and carrots through the cuisinart and shred them. Makes it a little easier for small kids to eat.

  24. It is a cool Himmelfahrt/Ascension Day/Vatertag/Father's Day today, good day to try a new soup recipe. We don't have Velveeta here so I used a Gouda Schmelzkäse/cheese spread. I cooked and pureed( for my Schatz) the vegetables and broth separately and then added the cheese, sour cream, milk, fried hamburger and I also added fried fresh mushrooms. This is so rich and creamy with potatoes and meat, it is perfect for a holiday soup for a German man on Vatertag. Frau Cab in Germany
