Quick Mexican Layered Bean Dip


I've been layering this bean dip in a 1 quart rectangular container that has a lid. It is easy to take on picnics or to pull out of the refrigerator when company blesses you unexpectedly. The recipe can easily be doubled if you are planning on serving a crowd. It easily keeps in the refrigerator for a full week. . .if it lasts that long.
  • 1 - 250 gram or 8 ounce light cream cheese
  • 1/2 cup light sour cream
  • 1 tablespoon Epicure Pueblo Bean Dip Mix or taco seasoning
  • 1/2 can refried beans
  • 1 cup purchased or home made gaucamole or homemade
  • 1 cup salsa
  • 1 small can sliced olives
  • 1/2 cup chopped green onions
  • 1 cup finely shredded cheese
  1. Mix together the softened cream cheese, the sour cream and the seasoning.
  2. Layer the cream cheese mixture first and then the remaining ingredients in order listed.
  3. Refrigerate and then serve with salted tortilla chips.

  3. I love the way you molded the dip but I'm wondering. . .how do you get it out of the container in one piece?

  4. Kim, I actually took the picture once the container was 3/4 empty . .and then I just took a egg lifter and scooped it up ..it kept it's layers quite easily for the picture.

  5. You have served this to us and it is worth the effort. It's always nice having a snack food that keeps well for a week and is no fuss to pullout and serve. I'll make this along with your home made pita chips. Kathy

  6. I make this dip all the time but I never thought to do a cream cheese layer?!! What a great idea to make it even more scrumptious:) I also love the pueblo bean epicure dip mix, its one of my faves!

  7. That will be on my list for this weekend. My whole family loves Mexican dishes...and this weekend, rather than having a formal time...we are going casual. I can make that ahead of time and Voila always ready when they arrive.
    My family is all celebrated out!!!!
