Muffin Batter
-4 eggs
-2 cups white sugar
-1 1/2 cups oil
-1 3/4 cups apple sauce (I use unsweetened)
-3 cups flour
-1 tbsp cinnamon
-1/4 tsp nutmeg
-1/4 tsp cloves
-2 tsp baking powder
-2 tsp baking soda
-1 tsp salt
-2 cups raisins (can use walnuts or 1 cup of each)
Beat together eggs, sugar, oil and applesauce. Add all dry ingredients and beat until well blended. Stir in raisins (and/or nuts). Line muffin tins with paper liners and fill each cup to almost full. Sprinkle approximately 1 tsp of brown sugar on the top of each muffin. Bake in 375ยบ oven for 15-20 minutes. Remove to a cooling rack. Yields 2 dozen muffins.
Thanks for the recipe. Everyone loves muffins around my house. We have used some other recipes from this site and they were fabulous.
ReplyDeletePeeeeeeeeeeeerfect. I absolutely need to use up my applesauce and well, there you are! Yum...looks like a great change from the 'regular' (excuse the reference) bran! grin
ReplyDeleteI love muffins! I know I would enjoy these! Have a nice holiday weekend to all of you special friends!
ReplyDeleteMmm, my mom used to make a coffee cake almost exactly like this!
ReplyDeleteI can almost smell them baking. . .what a great little muffin to make on holidays too. . .
ReplyDeleteThanks Kathy.
Sounds simple to do and so yummy! I have apples to use up which I will cook up into applesauce and then on to the muffins!!
ReplyDeleteMmmmmm, Muffins.......I am up so early and happen to have some applesauce, off I go to whip these up for my dh. Maybe the aroma will get him out of bed.......grin.
ReplyDeleteMy daughter-in-love made these the other day and I came over and ate one. Oh! They're so good and I'm going to make some for Sunday breakfast.
ReplyDeleteThanks!
Jody
I made these today. They're delicious, but I would cut down on the oil next time. It's a great use of applesauce. Thanks for the post!
ReplyDeletewhat kind of oil did you use?
ReplyDeleteYou had a question about the oil....I used Mazola which is a corn oil. Happy baking.
ReplyDeleteI made these today and they are delicious! I swapped out half the white sugar for light brown because I like the taste and it worked out great. As usual MGCC recipes never fail.
ReplyDeleteI made these last week and my husband has requested them again for this week! That is what I call a hit!
ReplyDeleteAnother winning recipe for my family! I am going to have to make more applesauce from our apple trees now because these muffins are going to be made often! All my kids loved them and that is rare for any recipe that isn't fudge!
ReplyDeleteI have tried alot of recipes for applesauce muffins and this one is amazing!!!
ReplyDeleteI decreased the oil to 3/4 cup and increased the applesauce to 2 1/2 cup. Muffuns were very light turned out very well, found muffins seemed heavy with so much oil.
