Kartoffelpuffer----Potato Pancakes



























We used to have a little neighbourhood restaurant that served very good Ukrainian food. My friend and I used to go there on occasion and she ALWAYS had Potato Pancakes. Sadly the restaurant has moved.
It was her birthday and I invited her for breakfast. I offered to make her anything her heart desired, she ask for her favorite Potatoes Pancakes. I want to share the recipe with you.
  • 5 medium potatoes peeled and grated
  • 1 small onion finely chopped or grated
  • 1 egg
  • 1/4 c. flour
  • salt and pepper to taste
  • a squeeze of fresh lemon
  1. Put all the shredded potatoes in a cheese cloth or dish towel and squeeze as much liquid out of them as possible.
  2. Mix together with the remaining ingredients.
  3. Use a Teflon pan so that you don't need as much oil. Take about a 1/4 c. of the potato mixture and brown about 3-4 minutes on each side over medium heat.
  4. Serve with sour cream, ketchup or applesauce. Good on its on or as a side dish.
You can see in the pan you really don't need much oil, just make sure your pan is hot enough.

  2. I LOVE potatoe pancakes! I think they are my favorite comfort food. Whenever I'm really down and in need of something to take me back to the "better days of childhood" I whip up some of these and pretty much eat them all myself!!! We always ate them with ketchup, although I know many who do eat them with sour cream and chives or applesauce and even sugar.

  4. My grandparents were of German descent, and Gramma (now 93) used to make potato pancakes often. Served with homemade applesauce, and sometimes a little sour cream if we had it. Thank you for sharing this recipe. I may have to add potato pancakes to my weekly menu.

  11. Yummy! A classic dish made by my aunt over the years. She grew up in a Mennonite home --- this recipe is so similar to hers. She always served it (in later years) with cucumber dressing.

  13. My gran-ma and ma made these all the time growing up...put mostly out of mashed potato's left over from a meal or two and then on special occasions with the potato's grated...sour cream to top for bregfest and then beans if we had them for supper.
