- 1 cup butter
- 1 1/2 cups white sugar
- 4 large eggs
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 can cherry pie filling (I used 1 1/2 cans..I like more filling but 1 can works fine too)
Glaze:
- 1 cup icing sugar
- 1 teaspoon lemon juice
- Enough hot water for drizzle consistency.
- Cream together butter and sugar, add eggs and beat well. Add flavorings.
- Stir in flour and baking powder and mix well.
- Spread half of the batter into a greased 12" by 17" pan. (approximately)
- Put pie filling over the base and then with a spoon drop the other half of the batter over the filling.
- This dough is fairly thick so it doesn't really spread well over the top, if you drop it by spoonfuls you get a pretty effect with the cherry pie filling peeking through.
- Bake at 350ยบ for 30 to 35 minutes. Top should be slightly golden in color.
- Drizzle with glaze while still warm.
I can assure you all that this is truly a wonderful and quick dessert.

This looks like a nice variation to platz! So good to tuck away more recipes for large groups - although I would easily do half the recipe and a "smallish" group -like four of us - could handle it, right?

ReplyDeleteI don't know if you'll ever see this but I was making this recipe and the bottom layer is veeeeerrrrrryyyy thin? Is that normal? Also, should I grease the pan? (It's cooking as I type so guess I'll find that out!)

Anonymous..there is baking powder in the dough so it should rise while baking..it looks thin as you spread it on the cookie sheet.

Thanks for responding. I made it with apple pie filling but will try either the suggested cherry pie filling or lemon curd (which I think sounds yummy). I made a full recipe and used a cookie sheet that was 12 x 15 (or close to that, not as big as what was listed in the recipe). It was skimpy when I spread it out but worked beautifully and everyone loved!
