Cookie Sheet Cherry Platz

My friend shared this recipe with me..once I tasted it I knew it was a keeper. It is a large recipe. Great to bring to gatherings or potlucks.

1 cup butter
1 1/2 cups white sugar
4 large eggs
1 tsp vanilla
1/2 tsp almond extract
3 cups flour
1 1/2 tsp baking powder
1 can cherry pie filling (I used 1 1/2 cans..I like more filling but 1 can works fine too)

Cream together butter and sugar, add eggs and beat well. Add flavouring.
Stir in flour and baking powder and mix well.
Spread half of the batter into a greased 12 by 17" pan. (approx) Put pie filling over the base and then with a spoon drop the other half of the batter over the filling. This dough is fairly thick so it doesn't really spread well over the top, if you drop it by spoonfuls you get a pretty effect with the cherry pie filling peeking through.
Bake at 350 for 30 to 35 min. Top should be slightly golden in color.

While warm drizzle with icing.
1 cup icing(powdered) sugar
1 tsp lemon juice and enough hot water for drizzle consistency.

    Our circle of friends all make this, you know a good thing once you have it and this is definately one of those recipes.

  6. What a handy recipe to have on hand. . especially since I usually have a can of cherry pie filling in my pantry .. I bet it would be good with the cranraspbery filling too ..

  7. This looks like a nice variation to platz! So good to tuck away more recipes for large groups - although I would easily do half the recipe and a "smallish" group -like four of us - could handle it, right?

  8. Betty, I have a blueberry one in the oven right now. I loved how easy it was to put together...won't my beloved be pleased with me today?!

    (I wish that I had could've made a cherry one because that would've been his favorite. Sometimes that pantry is so limiting!)

  13. My my my Betty R. This is truly an excellent slice of cherry platz you are showing us all to drool over! Yum....I can't think of anything better to serve with a cup of java! I am going to try this...wonder how many platz(s) the staff can eat in a few months. Grin!

  15. Yesterday when I read this post I knew I had finally found the use for the cooked cinnamon apples that I had frozen from last summer. I whipped this up at dinnertime and oh boy was it yummy!

  17. I don't know if you'll ever see this but I was making this recipe and the bottom layer is veeeeerrrrrryyyy thin? Is that normal? Also, should I grease the pan? (It's cooking as I type so guess I'll find that out!)

  18. Anonymous..there is baking powder in the dough so it should rise while baking..it looks thin as you spread it on the cookie sheet.
    I think greasing the sheet would probably be a good idea..I should add that in the recipe..thanks.

  19. Thanks for responding. I made it with apple pie filling but will try either the suggested cherry pie filling or lemon curd (which I think sounds yummy). I made a full recipe and used a cookie sheet that was 12 x 15 (or close to that, not as big as what was listed in the recipe). It was skimpy when I spread it out but worked beautifully and everyone loved!

    Told my hubby I think it's my new go to dessert. There's a company called Tastefully Simple that sells food items and I love their Almond PoundCake but it's so expensive. Yours is better!!! Thank you for sharing!
