Eesy-Cheesy Buns - Gluten-free


These buns are a quick and easy one-bowl prep.
They taste great fresh or toasted the next day.

Ingredients :

1 egg
2 tbsp butter
1/4 cup milk
1/2 cup grated cheddar cheese
1/4 tsp salt ( or leave out)
3/4 cup gluten-free Bread/Bun Mix (my favorite is Kinnikinnick's Kinni-Kwick Bread/Bun mix)


Method:

In small mixing bowl, melt the butter in the milk in the microwave - cool to lukewarm.
Wisk in the egg..
Stir in the grated cheese
With spoon beat in the flour until batter is perfectly smooth


Divide batter into 6 muffin tins.... and bake in 375' oven for about 20 minutes or until the buns are golden brown.

Note - if substituting your own flour mix for a commercial bread/bun mix that has leavening already in it ... add 2 tsp of baking powder

  4. This recipe really works only with a prepared bread mix which has more than just the flours, it also has the leavening agents, etc. - but a gluten-free bread mix should be readily available in your grocery store or local health food store.

  8. I just discovered Kinniknick Bread and Bun mix last month. I love it, it is so easy to use. I ordered a case of it, and I live in a travel trailer. I have it stashed everywhere!

    Thank you, thank you, thank you for posting this recipe (well, all these GF recipes!). I've been baking GFCF for 18 months now, with as many hits as misses, but these buns are the Best Ever! The consistency was perfect & mine looked just like your photo. Guess I should have used the Kinni-Kwik in the pantry sooner. Your directions are so clear and easy to follow. Many thanks!

    I made this recipe today but I added 2 teaspoons Baking Powder and they turned out very nice. My husband is a Celiac so I do a lot of celiac baking and I have experienced that leavening is crucial. Your recipe did not call for it so I was hesitant to try making the buns without a leavening agent of some sort. I did not use the Kinni-Kwik bread mix so maybe that is the difference. It may have leavening in it. My mix did not. I have had so many hit and misses, I am learning what to look for.
    Thankyou for your marvelous site. I have been using your recipes since before you published your book. I could hardly wait till your book came out and bought one as soon as I could. I check your blog regularly and I find that it is nice to use a recipe that I am confident will turn out. My appreciation. Did I mention that I am a Mennonite.

  11. Erna, thank you for your comment ! and yes, you are right the bread mix called for in the recipe does have leavening in it.
    I will add a note to the recipe that when substituting flour to make sure to add baking powder as you did .
