It's always fun trying new dishes or baked goods at a friend's table...and coming home with the recipe. We enjoyed a lovely dinner out recently which included hot-out-of-the-oven fresh bread. Darlene was so kind to share her recipe and since we were back to winter weather today, it was the perfect day to bake bread.
This recipe is meant for a bread machine and since so many of you have those sitting in the back of your cupboards, I thought it might be an inspiration to pull them out! The bread is mixed in the bread machine, allowed to rise for a short time and then baked in the traditional way. Since I don't have a bread machine, I mixed the dough in my Bosch mixer and did a double batch while I was at it. I will, however, give the instructions as specified for the bread machine.
Buttermilk Flaxseed Bread
- 1 cup buttermilk
- 2/3 cup lukewarm water
- 2 tablespoon vegetable oil
- 1 teaspoon salt
- 3 tablespoon honey (liquid)
- 2 cups flour
- 1 cup whole-wheat flour
- 1/2 tsp baking soda
- 1/2 cup ground flax seeds
- 1/2 cup oat bran
- 2/3 cup sunflower seeds
- 1 1/2 teaspoon bread machine yeast
- 1 teaspoon water
- 1 egg
- Add dough ingredients according to instructions provided by your manufacturer.
- Select dough/ manual cycle.
- When the cycle is complete, transfer dough to lightly floured surface.
- If the dough is not easy to handle, knead is some extra flour.
- Cover the dough and let rest for 15 minutes.
- Using a little extra flour on the kneading surface, shape the dough into a ball.
- Lightly grease a baking sheet then place the ball of dough on the sheet.
- Flatten it somewhat.
- Cover and let rise for about half an hour...or until doubled in size.
- Beat together egg and water. Brush top of loaf with egg mixture.
- Using a very sharp knife, score the top of the loaf three times.
- Bake at 375°F for about 30 minutes.

ReplyDeleteI have buttermilk in my fridge and so I will bake a loaf of this bread on the weekend. I still do use my bread machine, especially if we have company for the night and I want my guests to wake up to the smell of fresh bread and good coffee. Kathy

ReplyDeleteI would just follow a standard recipe for bread (as far as procedures and kneading)...but substitute the ingredients found here. Good luck...and let us know how it turns out!

ReplyDeleteHi judy, I made this bread today using my bread machine to mix and oven to bake. Oh my ....it is so good! I didn't have any sunflower seeds or oat bran, so I added 1/2 cup of 7 grain cereal. We enjoyed it for supper and will toast it for breakfast. Every one needs to try this if they have a bread machine. It is so easy and makes a huge loaf that really looks so nice...and smells wonderful too. Kathy

If I am making this in my Bosch, do I still use bread machine yeast or another yeast? Any other directions specific to the Bosch? Thanks so much, can't wait to try this!

Sorry, Lary...I haven't had that happen so I'm not sure what could be causing it to collapse.
DeleteNo bread machine at my house so I made this dough using the conventional method. I was a few TBSP short of oat bran so topped it up with an equivalent weight of wheat germ. After the 1st rising I kneaded raisins into the dough, shaped it into 15 buns and let them rest in the fridge overnight. Everyone enjoyed the buns fresh from the oven for Sunday breakfast. Barb, since Judy is away right now, I will take the liberty to respond for her. I would suggest that you put all the liquids in a mixing bowl, making sure the combined liquids are a bit warm on the warm side (using hot water). Then stir in the combined dry ingredients (using instant yeast), kneading in the last bit by hand to make a smooth dough. You can also use a mixer with a dough hook attachment. I hope that helps.
