Rice Crispie Chocolate Roll


I was introduced to this treat by another volunteer in our church kitchen many years ago. This recipe is a combination of the recipe she shared with me and one I found in our church cookbook. I have to warn you that these go fast where there are kids or teenagers! My daughter once shared her snack with a friend on a bus trip and the response was, “This is the best thing I ever tasted!”

Ingredients:
  • 1 cup corn syrup
  • 1 cup sugar
  • 1 cup smooth peanut butter
  • 3 tablespoons butter
  • 6 cups Rice Crispies
filling:
  • ½ cup butter
  • 3 tablespoons milk
  • 2 cups icing sugar
  • 2/3 cup baking cocoa
  • 1 teaspoon vanilla
  1. In a large pot, on medium heat, bring corn syrup and sugar to boil. 
  2. Stir in peanut butter and butter. Remove from heat; mix in Rice Crispies. 
  3. Line a 14x18 inch cookie sheet with wax paper. Press rice crispy mixture into cookie sheet, with buttered hands.
  4. In a small pot, melt 1/2 cup butter (remove from heat), add milk, icing sugar, cocoa and vanilla, stirring until smooth. 
  5. Spread over flattened rice crispy mixture. 
  6. Starting at wide end, roll up jelly-roll fashion, shaping and squeezing gently. Wrap in plastic and refrigerate for a few hours, until set.  (There is a sweet spot of when it's easiest to slice - don't let it harden too long)
  7. With a sharp knife, slice into 1/2 inch slices. You may have to use both hands to press knife down, since it’s not a sawing motion. Keeps well in fridge if you hide it. Wrap it up and make someone smile! (freezes well too)

  2. oh i wanted to mention that when i pat down the rice krispie mixture i find that it works better for me if my hands are wet (damp), instead of greasy.....

  3. Oh .. those are my favorite flavours. . .I make something similar in a bar. . so yummy. Isn't it just wonderful tucking these goodies away, knowing it will make someones day .. .a bit yummier.

  6. This looks so delicious! If my kids were still home, I would definitely make this, but if I do now, I would eat the whole thing by myself.... and that would not be good! :) So I guess I´ll just look at it and lust after it....

  11. Okay, I admit, I stumbled upon this site while reading Cottonwood Diner. I'm a Mennonite guy who has already found a wonderful Mennnonite lady who can cook...but I haven't had dinner yet and boy does this stuff look good!

    I just don't know what it could be replaced with since it's a big part of the flavor. I was almost thinking caramel, but that's very sweet...

  18. Christy - My mom (who also has a peanut allergy) has discovered something called "No Nuts Golden Peabutter" which is made from Golden Brown Peas but tastes just like peanut butter. She recently made her peanut butter cupcake recipe with this product and none of us could tell the difference.

    She has found it at Iga, Save On, and Superstore usually around the Organic Peanut Butter. Apparently it has a picture of a cartoon Mother Rabbit feeding it to 2 baby rabbits. I hope this helps!

  19. Christy - My mom has recently discovered a product called "No Nuts Golden Peabutter" made from Golden Brown Peas. It looks and tastes just like peanut butter. It is available at Save On, IGA, Superstore, etc. My mom recently made us peanut butter cupcakes and no one could tell the difference!

    Apparently it is found around the Organic Peanut Butter and has a cartoon Rabbit on the front feeding it to her 2 baby bunnies. I hope this helps!

  20. This weekend, Tanya, Corrine & Sandra will be at my place for a girl's bash! However, it won't quite be the same without our Julene. Whenever us girls get together, we get reminiscing about the good old crazy days in the Prairie dorm. Nothing takes us back quicker than a bite of your Rice Crispie Chocolate Rolls. We would always raid Julene's care-packages from you... I mean, she'd lovingly share with all of us, and the roll literally lasted mere seconds. If I still lived close, we'd have to place an order! :) So, I don't think there's a better time for me to give this recipe a whirl then this weekend- with loving thoughts of Julene, our college days, our friendships that have lasted these 13 years since, and her amazing Mennonite Mom who sure can cook!

  21. Wow, I'm SO glad I found this site! I made this recipe as a pre-teen over 10 years ago, and it was probably one of the best-tasting treats I've ever made! I lost the recipe along the way and haven't made it since. Then today I was just thinking, "Wouldn't it be nice if I could find that recipe online?" And here I am! :)

  22. My mother-in-law just died this year and she made this recipe for many years mainly for my son who made a big deal of it. Sometimes he shared it with us and sometimes not. At university, his house buddies would eat it up in no time at all. He called just before Christmas to see if I had the recipe. This is as close as I could come to it. Takes great. Thanks

  23. I used to make these all the time for my son when he was a baby. He is now 34 and I lost track of where I kept my recipe. I was so glad to come online and searched for it and low and behold, here it is. I know they are wonderful and I made them in the past and take them to friends and everyone has always wanted more and more of them. My original recipe came from a Mennonite lady up in Manitoba, Canada. Again, thank you for posting this. I am making them today.
