Stuffed Celery

This is what I turn to if I have to make an appetizer in a hurry.
It's simple, tasty and I usually have all the ingredients on hand.
  • 1 package cream cheese, softened
  • 3 Tbsp. mayonnaise
  • 1 tsp. dill weed
  • 2 tbsp. finely chopped red pepper
  • 1 tbsp. finely chopped chives
  • 1 head celery, root end cut off and leaves removed.
  • salt and pepper or a dash of Tabasco if desired
  • 1 can of crabmeat, drained or 1 cups small shrimp

  1. Beat cream cheese, mayonnaise, chives and seasonings together.
  2. Stir in Shrimp or crabmeat and peppers
  3. Separate celery stalks, wash each and dry with paper towel
  4. Fill each stalk with cream cheese filling. If it looks a bit messy use a small silicone spatula or damp paper towel to clean up the edges.
  5. Cut each filled stalk into 2 or 3 inch lengths and place on serving dish.
  6. Sprinkle with dill weed, or chopped fresh parsley and serve.

  2. Looks delish! I'm trying to do the 'low carb' diet and celery gives me that crunch I miss from crackers.

  4. I love that because sometimes if I don't feel like making a vegetable with supper, I'll put out celery stalks and Ranch dip. This is even better!! ♥

  7. Bev, this looks so good. I have some packages of imitation crab in my fridge right now that would also probably work really well with this.

  8. Great minds think alike. Just before logging on I ate two stalks of celery with tuna "stuffing".

    You know, we are supposed to eat fish more often. So I do this often for lunch. I use the tuna, crab or salmon stuffed in green pepper quarters, or spread on cucumber or apple slices.

  9. Oh this looks wonderful! I love stuffed celery and the crab and dill here sound fantastic! Of course I also love my celery stuffed with peanut butter. ;)

  10. what works AMAZING with this recipe, is put the ingredients into a small ziploc bag, cut the corner of the bag and squeeze into the celery, even my kids can help!!!!

  11. Try putting the filling into a piping bag, it'll save time and less messing around. :-)
