A delicious make ahead salad recipe that I found in the 'Cooking with Grace' cookbook. I made a few changes.
- 2 bunches raw broccoli, cut in small chunks
- I medium onion, diced (I omitted this)
- 1/2 cup raisins
- 8 slices bacon, fried crisp and cut in small pieces
- 3/4 cup mayonnaise
- 1/4 cup sugar
- 2 tablespoons vinegar
- 2 tablespoons sunflower seeds, salted and roasted
- In a medium size bowl combine broccoli, onion, raisins, and bacon.
- In a small bowl mix together mayonnaise, sugar, and vinegar.
- Pour mayonnaise mixture over broccoli mixture, mix well and cover.
- Refrigerate for a couple of hours or overnight.
- Just before serving stir in sunflower seeds.
this sounds good. I am always looking for recipe's to bring to work for lunch. I have been experimenting with replacing mayo with plain lowfat yogurt with some good results. I only replace half. I think I will try it with this recipe. thank you for posting it.
ReplyDeletemmmhm I love broccoli salad, ca't wait to make this one
ReplyDeleteMy kids love broccoli salad from the deli and this recipe will be a good replacement for it. Thank you for sharing and I'll link back my results when I make it. I love love love this blog :)
ReplyDeleteI love broccoli salad. Mine omits the raisens and sunflower seeds but does have shredded mozz. cheese. It's my favorite. I also use green onions or red onion. Not quite at strong as regular onion.
ReplyDeleteBetty! I really enjoy this kind of salad. Thanks for posting the recipe :0)
ReplyDeleteThis looks fantastic.
ReplyDeleteI love this salad and make it often but I add a finely minced clove of garlic to the recipe. It adds a nice zip to it.
ReplyDeleteI love Broccoli Salad, but never had a recipe to try! I'm definitely going to try this! Thank you! :)
ReplyDeleteThis is one of my most favorite salad recipes. I always add a little bit of shredded cheddar cheese to it as well.
ReplyDeleteThis is one of my favorite salads. I'm glad you added it to our recipe collection. Kathy
ReplyDeleteInstead of raisins, I add a drained tin of mandarin orange segments. This is my favorite salad hands down!
ReplyDeleteSlivered almonds and cauliflower are great in this salad too.
ReplyDeleteI love broccoli salad (I even put broccoli in my chicken salad) but I find it much nicer to eat and not as gas-inducing if I blanch the broccoli before making the salad. Just drop it into lightly salted boiling water for about 1 minute, then remove to a bowl of ice water to cool quickly. I will also sometimes put the broccoli onto a platter to cool in the freezer if I am low on ice. Just don't forget it :) 20 minutes usually does the trick.
ReplyDeleteOoohh...I LOVE broccoli salad! I usually tend to pick up a bag of the broccoli slaw and follow the directions on the bag, but this looks so tasty!
ReplyDeleteGuess what's on my menu for this weekend. I love broccoli and this has a few different versions.
ReplyDeleteKeep em coming.
I LOVE this salad. Don't forget to put grated cheese on top!!! :)
ReplyDeleteLove this salad. My boys do too and it brings back memories of family gatherings
ReplyDeleteI almost fell off my chair when I saw onions in the ingredient list, and then knew that you were THE BettyR when I saw that you omitted them, LOL. Don't you just love this salad! It's such a favorite. Of course I have to have more than 2 tablespoons of sunflower seeds. Two tablespoons for the salad, the rest for me!
ReplyDeleteBetty, just for the record, I leave out the onions too . . . and I like to add red grapes to the salad. One of my favorite salads.
ReplyDeleteI make this salad alot... but when no one is looking I add a tsp or so of curry!! to the dressing, just enough to make someone wonder 'what is that unique taste?'If I have grapes I add them, if not? raisins or dried cranberries!and seeds, of course! and 1/2 red onion, cut fine. Super!
ReplyDeleteYum! We mix broccoli and cauliflower for this salad, and red grapes.
ReplyDeleteI also love this salad! I plan to make it this week.

I went looking for something to do with my broccoli for supper tonight as just steaming it gets boring after a while. I am so glad I found this, though I did change things for what I had on hand. It is still a big hit.
ReplyDeleteI changed the mayonnaise for 1 cup Miracle Whip, the vinigar for 2 tbsp lemon juice and red onions for 4 fresh garden green onions. I know, not the same recipe at all anymore. I only put in about 2 tsps of sugar as my hubby is diabetic.
We don't like raisins so they became small cubes of mild cheese and of course no sunflower seeds as I am the only one who likes them so I put sesame seeds on instead. Then to give it a nice color.. I added about a tbsp of prepared mustard. MMMMMm I have never liked broccoli salad. I find it way too sweet but I over the yrs I keep trying it only to leave it on the plate. I love broccoli so figured it must be an aquired taste. Not so. I do like this one though so thank you from the bottom of my heart as now I can eat broccoli salad.
You can use agave syrup to replace e sugar. It is much lower on the glycemic index. it has a mild molasses taste and is quite a good replacement.
DeleteLOL imagine my surprise when I opened my email ...saw the post from Mennonite Girls can Cook and it was about cooking a ham but below was this about broccoli salad. I had just sat down from making it!! LOL It is chilling in the fridge now! Who is coming over??? LOL
