Broccoli Salad

A delicious make ahead salad recipe that I found in the 'Cooking with Grace' cookbook. I made a few changes.
  • 2 bunches raw broccoli, cut in small chunks
  • I medium onion, diced (I omitted this)
  • 1/2 cup raisins
  • 8 slices bacon, fried crisp and cut in small pieces
  • 3/4 cup mayonnaise
  • 1/4 cup sugar
  • 2 tablespoons vinegar
  • 2 tablespoons sunflower seeds, salted and roasted
  1. In a medium size bowl combine broccoli, onion, raisins, and bacon.
  2. In a small bowl mix together mayonnaise, sugar, and vinegar.
  3. Pour mayonnaise mixture over broccoli mixture, mix well and cover.
  4. Refrigerate for a couple of hours or overnight.
  5. Just before serving stir in sunflower seeds.

  1. this sounds good. I am always looking for recipe's to bring to work for lunch. I have been experimenting with replacing mayo with plain lowfat yogurt with some good results. I only replace half. I think I will try it with this recipe. thank you for posting it.

  12. I love broccoli salad (I even put broccoli in my chicken salad) but I find it much nicer to eat and not as gas-inducing if I blanch the broccoli before making the salad. Just drop it into lightly salted boiling water for about 1 minute, then remove to a bowl of ice water to cool quickly. I will also sometimes put the broccoli onto a platter to cool in the freezer if I am low on ice. Just don't forget it :) 20 minutes usually does the trick.

  17. I almost fell off my chair when I saw onions in the ingredient list, and then knew that you were THE BettyR when I saw that you omitted them, LOL. Don't you just love this salad! It's such a favorite. Of course I have to have more than 2 tablespoons of sunflower seeds. Two tablespoons for the salad, the rest for me!

  22. I went looking for something to do with my broccoli for supper tonight as just steaming it gets boring after a while. I am so glad I found this, though I did change things for what I had on hand. It is still a big hit.

I changed the mayonnaise for 1 cup Miracle Whip, the vinigar for 2 tbsp lemon juice and red onions for 4 fresh garden green onions. I know, not the same recipe at all anymore. I only put in about 2 tsps of sugar as my hubby is diabetic.

We don't like raisins so they became small cubes of mild cheese and of course no sunflower seeds as I am the only one who likes them so I put sesame seeds on instead. Then to give it a nice color.. I added about a tbsp of prepared mustard. MMMMMm I have never liked broccoli salad. I find it way too sweet but I over the yrs I keep trying it only to leave it on the plate. I love broccoli so figured it must be an aquired taste. Not so. I do like this one though so thank you from the bottom of my heart as now I can eat broccoli salad.

    1. You can use agave syrup to replace e sugar. It is much lower on the glycemic index. it has a mild molasses taste and is quite a good replacement.
