I'm not quite sure on how to introduce this little video,
other than hoping the visual element on how to shape buns is helpful.

Great video, Anneliese! My method is to cut the dough and roll each bun between my hands - your method looks much easier and the buns are very consistent .. thank you for sharing, I will definitely try this next time!
You are a pro! I could tell that you were slowing down so that we could tell what was happening. I don't know how I construct rolls except that I bake them in a cake pan, not on a cookie sheet and I think that must change textures and it takes me forever. I am going to try it your way!
Thanks for the video... Are these buns used for sandwiches or are they the same as dinner rolls? I have made dinner rolls since as long as I've been married, almost 37 years, and have never seen them done this way. Great demonstration.
Sandwich buns and dinner rolls shape themselves by how far apart you place them. I'd you allow room for spreading they are regular buns . If you shape them a bit smaller and close together.. They end up touching when they rise and become pull- a -part rolls.
My mom makes buns, using just that method. I find mine too 'bumpy' if I do only that, so I place my pinched-off ball on my left open palm and cup my right hand over the dough ball and twirl it around in a circular motion till it's nice and smooth. A bit more time involved but worth it for me. Thanks for posting this video Anneliese, it's very well demonstrated. Keep more coming!!
That was a great demonstration and so helpful. Thank you. My problem lies with forming loaves of bread. I'd like to learn how to create a nicely rounded loaf without a stretched or uneven top.
I wished I had this demo in my early years...because I was one of those young brides who threw the dough across the room in frustration...but years later....we're still eating buns and they are smooth. I have yet to learn how to make zweiback...somehow I make the bottoms to big and they are always lopsided...but we all have a good laugh. There's always something to continue learning in the world of baking.
Certainly not the way I learned to shape buns! Guess there are always more ways to do things than the way we were taught. May have to try this method, but not sure my arthritic fingers will co-operate.

Oh Anneliese - this is so great! I am a visual learner for sure and this tutorial is just so helpful!! I often wondered how you "pinch" the dough to make buns - you make it look so easy! I can't wait to try this. Please keep the videos coming - I love this!
Thanks for the tip about greasing the pan, which also greases your hands so you can work the dough. I don't like greasing the pan with my hands, but I can see it's useful for the shaping part.
Thanks so much for the video. I've been making buns for years using the same method as yours, but have not had success making zwieback as the tops were either lopsided or sliding off. I see now how it's done - great video!
