This coconut loaf is moist and flavorful. I like it plain but can be drizzled with a glaze while still warm or with a dollop of whipped cream.
Ingredients:
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 teaspoons coconut flavoring
- 2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sour cream
- 1 cup coconut flakes
- In a medium size mixing bowl cream butter with sugar.
- Stir in eggs and flavorings until well combined.
- In another bowl whisk together dry ingredients.
- Stir dry ingredients into creamed mixture alternately with the sour cream.
- Fold in coconut.
- Pour batter into a greased 8" x 4" x 2" loaf pan.
- Bake in a 350ยบ oven for 50 minutes or until toothpick inserted comes out clean.
- Remove from oven, let cool for 10 minutes, then remove from pan.
- Serve warm or cold.

ReplyDeleteI made it last night. I made it with yogurt instead of sour cream, since I always have yogurt culture on hand. I also doubled the vanilla.
I could hardly stop eating it!

Baked this today. I love coconut. Very happy of the result. It looks exactly as the picture. Very tasty, very moist. Made 3x the recipe. Used 1 9x5x3 loaf pan and 2 6 inch round pans. One for me, one for the Bible Study, and 1 for my neighbor who cuts the grass on my side of the apartment we are renting. Thanks for the recipes here at MGCC. Each time I need to make or bake something requested,I can count on your blog. No need to drain my brain about the ingredients and measurements, because of MGCC. It is always a hit and success. Can't go wrong following the instructions. Again, Thank You, Thank you.
