The only thing was I only had to bake them for 7 minutes instead of 12. I divided the dough in thirds, cooked one, and have the others in my refrigerator, wrapped in waxed paper, cooling. Once it cools down, I'm going to roll it into logs that I can freeze, slice and bake later.

I believe I could sit down and eat the ones that I have just finished baking in one sitting!! Your local health food store should carry gluten free flours or you can order them online ... a couple I have enjoyed ordering from are Kinnikinnick Foods (Canadian) http://consumer.kinnikinnick.com/index.cfm/fuseaction/consumer.home.html or my fav. Authentic Foods http://www.authenticfoods.com/ (USA)
If you happen to live in the Fraser Valley, you could shop where I get most of my flours, Sardis Health in Chilliwack or Alder Health in Aldergrove.

Gluten free recipes can be doubled but my experience is that in gf yeast baking doubling does not yield satisfactory results - better to mix in two batches.
