I only had whole wheat flour so i increased the liquid. I used 1/3 cup lowfat greek yogurt and about 3/4 cup of skim milk instead of buttermilk, and they came out so nice and moist! Thank you so much for sharing the recipe. I did leave out the coconut & used frozen fruit. Rest assured that it won't be long before I make them again. I should have read the reviews before I made them because I did not use the paper liners & did not spray my tins enough but in this case that is OK, I will be saving the not so pretty ones for the cook. :)Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-6454531829676162260.post-89521522557783791282012-08-27T10:24:32.288-07:002012-08-27T10:24:32.288-07:00You can leave out the coconut. I would suggest a good spraying of the muffin tins and/or parchment paper liners. I wanted them to be like the Tim Hortons fruit explosion muffins, so I put some batter in the base, put a little dollop of homemade freezer jam, and then topped it off with more batter. They are so delicious! Taste way better than Tim Hortons. Only thing, they were hard to get out of the muffin liners.rntylr22https://www.blogger.com/profile/07316431871781673929noreply@blogger.comtag:blogger.com,1999:blog-6454531829676162260.post-8454352852594622422012-01-25T17:35:57.026-08:002012-01-25T17:35:57.026-08:00Emily, yes you can use fresh fruit... it's jus...Emily, yes you can use fresh fruit... it's just a tad harder to stir in and not mush them into the dough.Anneliesehttps://www.blogger.com/profile/10288355284573379421noreply@blogger.comtag:blogger.com,1999:blog-6454531829676162260.post-51108859702580702442012-01-24T20:08:52.854-08:002012-01-24T20:08:52.854-08:00Can you use fresh fruit? Can you use fresh fruit?Emilynoreply@blogger.comtag:blogger.com,1999:blog-6454531829676162260.post-40029894954986908322011-01-14T18:19:39.425-08:002011-01-14T18:19:39.425-08:00I made these today - wonderful, my family loved th...I made these today - wonderful, my family loved these!
